Side Quest: Craft Night: Memory #2 Painting BotW


Well it's been awhile since we did some arts and crafts, so today I wanted to share with you a painting that I did a couple of weeks ago. Using all the inspiration from watching Boss Ross I could muster, this cute acrylic on canvas is the first of hopefully completing all the memories in BotW. Enjoy!

Quest 102: Lime ChuChu Cookies

Chuchus are everywhere, but my favorite are the creepy version that shows up in Majora's Mask. The expression of the face and the fact that you can see what you will get as a reward are just too much. Today, we will capture these creepy little guys in a cookie with a sour twist - Lime ChuChu Cookies. They are basically a box of lime gelatin that got together with a sugar cookie. Surprisingly good with the sweet and sour combination. These are just about the simplest thing you can make. Enjoy!

Gear!
1-1/2 cups butter, softened
1 cup sugar
2 packets (3 oz) Lime Flavored Gelatin, divided
1 egg
1 tsp. vanilla
3-1/2 cups gluten free AP flour with xanthium gum - We used Pamela's!
1 tsp. baking powder
Candied eyes, heart pieces
Green Sugar Glitter


Quest!
Preheat the oven to 400 degrees F. 

Cream together butter, sugar and 1 of the gelatin packets. Add egg and vanilla, Stir. Add in Flour and baking powder. Stir to combine. Let dough sit for 10 minutes.

Pour our second gelatin packet onto a plate. Form dough into 1 inch balls and dip into gelatin powder. Place on a baking sheet and with a cookie stamp or bottom of a flat glass, press each cookie flat. Add eyes, heart piece and additional sugar glitter. 

Bake for 8-10 minutes or until just turning golden. 

Cool on sheet for a minute or two before transferring to a cooling rack. 

Repeat until all cookies are baked.

Quest 93: Gohma Crab Dip


Gohma has surfaced once again and with his defeat has left plenty of crab meat to go around. Today, we have a lovely crab dip that goes well as a fondue with veggies and bread or just with crackers. It's pretty easy to prepare and makes a great quick dinner during the week as well as a fancy dip for guests. Enjoy!


Gear!
1 Can Lump Crab Meat
1 Lemon, juices and zested
1 T. Chopped Garlic
1/2 cup Roasted Red Pepper
1 T Basil leaves, chopped
1 Pkg Boursin cheese- we used the garlic and herb
1 tsp Old Bay Seasoning
1/2 cup veggie broth
salt & pepper to taste




Quest!



Saute garlic, roasted red peppers and basil leaves for a few minutes in a teaspoon
Add crab meat, lemon juice, zest, seasoning and heat through. Add cheese and veggie broth.

NOTE: If you can't find boursin cheese, you can use cream cheese, it will have a slightly different consistency, but still pretty tasty.

Your dip will be rich and creamy and ready to go. Enjoy!

Tingle's Random Kitchen Tip: Make your own GF Breadcrumbs



Gluten free breadcrumbs are expensive and don't add a lot of flavor to your meal. So, let's make use of our leftover bread - it's expensive too. Thanks to our friend Tingle, we will be making our own. This process is super easy and can be flavor adapted in a multitude of ways. Enjoy!

Gear!
1 loaf GF Bread - stale
2 cloves garlic
1 t. salt
1 T olive oil

Quest!
Preheat your oven to 400 degrees F. On a half sheet pan, lay out the bread in a single layer. Mince garlic and salt with olive oil into a paste.

Spread the paste on both sides of the bread. Bake in the over for about 10-12 minutes or until bread is golden and toasty.

Let toast cool.




Add the toast to a food processor. In batches, depending on how much toast you have made and the size of your food processor. pulse into small crumbs.

Like this!












Bag up, mark and freeze until ready to use.

Quest 71: Reekfish

Summer is going strong here in Minnesota, which gets us out on the grill a lot more. I have been planning on doing Reekfish for a while now, but just didn't know what kind of reek we wanted to go with. Well today, I think I can finally share with you a recipe that has the right kind of reek that we can all get behind - garlic! This Twilight Princess delicacy is sure to please. Enjoy!




Gear!
2 Whole Red Snapper Fillets - Tails intact
Garlic Rosemary Compound Butter - recipe below
Olive Oil
Salt
Pepper



Quest!
Compound butter is first . . .
 In a food processor add 5 garlic cloves,  2 fresh sprigs of rosemary, 1 tsp course salt and 1 tsp black peppercorns.
 Pulse together until garlic and rosemary is mince. Peppercorns may not fully grind.  Add a stick of unsalted butter. Pulse together until butter is fully incorporated with ingredients.


Spread butter onto plastic wrap. Form back into a stick shape. Place in the refrigerator for 2+ hours. Use within about a week or freeze and it will keep for about 2 months.
Let's make Fish! Today we are using Red Snapper, but you are looking for a nice fresh firm white fish that still has skin and a tail to keep things together.

Get the grill started! You want the grill nice and hot. Today we are using gas, but charcoal should work fine too.
 Open your fish up and pat dry with paper toweling - do this on the outside too. Check for bones by running your fingers over the flesh of the fish. Pull out any bones with clean pliers.
 Take 2-3 tablespoons of that lovely compound butter we made earlier and rub it into each inside part of the fish. Be sure to really rub it in to get the flavor penetrating. Sprinkle with salt and pepper.
 Close the fish back together again. Brush the outside of the fish skin with olive oil. We used garlic infused olive oil in order to add even more garlic the party.
 Place the fish onto the hot grill. Cook the fish about 5-6 minutes aside or until the fish is flaky.  The outside skin should begin o blister and give good grill marks.
Enjoy this very garlicy fish with potatoes or Hylian Shroom Polenta!

Quest 70: Hylian Shroom Polenta

I am super excited about the new LOZ: BotW game coming out. This has been a very exciting E3 week in general. So to kick things in the right direction. I am sharing a recipe we really enjoy in our house and also celebrates the introduction of the Hylian Shroom to the repertoire of ingredients found in the newest addition to the Zelda family. The wheels were definitely turning as I watched all the Treehouse footage this week - and the possibilities are looking pretty good. Anyways, if you haven't seen the trailer - where have you been? Get on YouTube and watch it! I hope you like this recipe/ Enjoy!

Gear!
8 oz sliced mushrooms -I recommend using a variety of mushrooms for this because it really brings out the mushroom flavor.
2 T butter, divided
2 tsp salt
1 cup uncooked polenta
1 cup heavy cream
3-4 cups mushroom broth
1 cup grated Parmesan cheese


Quest!

In a sauce pan, melt 1 T butter and add mushrooms. Cook together until mushrooms start to develop good color.








Add a 1 tsp of salt cook another 1-2 minutes. Remove from heat onto a plate for later.
 In the same saucepan, add 1 T butter, polenta, cream, 1 t. salt and 3 cups of broth.. Bring to a near boil, stirring regularly to keep it from stick to the bottom. Add more broth if the polenta is still uncooked, but had absorbed all the liquid.
 When is done, it will have absorbed most of the liquid and be a nice creamy consistency. This takes about 18- 20 minutes.
 Add grated Parmesan and mushrooms into the done polenta.
 Stir together until melted and delicious.
Enjoy with pork, beef, or just by itself. Leftovers are amazing the next day.

Quest 44: Zucchini Muffin Minish Caps


It's zucchini time! I have been looking ways to incorporate more green ideas into the blog, and today I think I may have succeeded. Minish Cap is a great game in the LOZ series that takes advantage of size in a bigger way that Ocarina of Time. It also brings to life the hat that Link wears in a way that is beyond imagination. With this in mind, today we will attempt to make Minish caps to place upon our zucchini muffins. It will be an interesting and tasty quest that I hope you give a try! Enjoy!

Muffins!
1/2 cup sugar
1/2 cup butter, softened
2 eggs
1/2 cup sour cream
1 t. vanilla
1/4 cup apple sauce - I used unsweetened
2 cups GF All-purpose flour with xanthan gum mixed in
2 t. cinnamon
1/2 t. cardamom
1 T. baking powder
1 t. baking soda
1 t. salt
1 cup finely grated zucchini
1/2 cup walnuts chopped

Streusel Topping!
1/2 cup brown sugar
1 T cinnamon
2 T. butter cold and cubed
1 T. GF flour

For the Minish caps!
carrots
zucchini
toothpicks
mandolin

Quest!
Preheat the oven to 375 degrees F. Prep a muffin pan with muffin liners. Cream together sugar and butter. Add eggs, sour cream, vanilla, and apple sauce. Mix together.






To the mixture, add flour, cinnamon, cardamom, baking powder, baking soda, salt, grated zucchini and walnuts.







Spoon the muffin mix into the muffin liners and push the thick dough into the liners to remove bubbles.







Make the streusel topping by adding all ingredient to a bowl and crumb with a fork. Do not cream!







Spoon the streusel topping over each of the muffins.








BEING VERY CAREFUL!! Set your mandolin to 1/8 inch setting. Slice zucchini lengthwise creating 12 equal pieces. A medium zucchini should get you just enough. Set the mandolin to 1/16 setting and repeat with peeled carrots.





After some trial and error, the best way to make little caps is to start rolling on one end until it makes a nice spiral. Use a toothpick to secure at the top. Add the carrot piece to bottom and press into the muffin. If you don't press them into the muffin, as it rises, it will push the cap off and it will tip over.
Make a cap for each muffin. I added a little vanilla sugar over the top of the caps.


Bake muffins for about 25 minutes or until a toothpick comes out clean. Remove from the oven and let cool for a few minutes and Enjoy!

Quest 42: Loftwing Nests

Skyward Sword is a great game. The idea that an entire society can live hundreds of miles above the rest of the world and no one notices takes the idea of Laputa: Castle in the Sky to a whole different level. Have you ever wondered about where the Loftwings go at night? You can't fly around, so they must go to sleep somewhere. Well today, we are going to make Loftwing nests to give them somewhere to sleep. These are a little time consuming, but not terribly difficult to make. They look super fancy and would certainly dress up any Mario Party or other Zeldathon that you may be planning to entertain your friends. Enjoy!

8 oz. Hard Cheese such as Parmesan - buy a chunk, not the pre-shredded
Cookie Sheet
Microplane
Offset Spatula
Muffin Tin or small cups
Silicone Mat
1 cup Mini Mozzarella Balls
1/4 cup Fresh Basil Leaves
1 cup Grape Tomatoes cut in half - I used both red and yellow
3 oz. Prosciutto Ham, cut into small ribbons
2 T. Garlic Olive Oil
1 T. Balsamic Vinegar
salt and pepper to taste

The Quest!

Preheat the oven to 400 degree F. Place your silicone mat onto your cookie sheet. Using the microplane, shred your cheese making round shapes for your nests.

Bake your nests for about 5 minutes or until just starting to brown.




Remove from oven and let the cheese sit for 1-2 minutes to let the cheese cool. Place on the back of the muffin tin or cups using an offset spatula. Form to the shape of the cups. Set aside to cool completely.





Let's make the salad! This part is super easy. in a bowl, add your drained mozzarella balls (if they are larger-quarter them), grape tomatoes, prosciutto and mix them together. Tear your basil into small pieces and add them to the bowl. Toss this mixture with olive oil and balsamic vinegar. Salt and pepper to taste. That's it!




Put it all together by taking your cheese nest and spooning a reasonable amount to the salad into the cheese. Line them up on a platter and enjoy!

Side Quest: Craft Night! Decoupage Canvas Art

While flipping through some old Nintendo Power magazines I got a neat idea. Cut out the pictures that I really like and show them off in my house. Now this is the first one I did and I am sure that there will be others of various sizes in the future. This is a great idea for kids to show off the things that they like to hang in their room. It's easy enough for just about anyone to do it! Enjoy!





Gear!
Canvas - I used 8 x 8 inch
Colored Scrapbook paper
Magazine pictures - cut out
Mod Podge
Sponge brush
Scrapbook embellishments

The Quest!
Cut scrapbook paper into random pieces.

Brush canvas with a thin layer of mod podge.

Lay paper pieces out the way you want them in one layer.

Apply a thin layer of mod podge over this layer and let dry.


Add additional layers if necessary and let dry between layers.








Add embellishments. For this one, I found some scrapbook keys and rhinestones.
