Quest 88: Loaded Cheesy Toto Potatoes


The Oracle of Ages Manga brings us potatoes beyond our friends Eenie and Meenie's garden. With this, I would like to share with you a make ahead side dish that is delicious and of course gluten free. It starts with making a cream of onion sauce and just gets yummier from there. Enjoy!


Gear!
1/4 cup chopped onions
1 clove garlic
4 T Butter
salt & pepper to taste
2 T. potato starch
1/4 cup cream
32 oz. diced potatoes
6 oz. Top the Tator or sour cream
4 slices bacon, crumbled
4 oz. cheddar cheese, shredded divided
1 T parsley
1/2 cup corn Chex cereal, crushed


Quest!

Melt butter in a saucepan. Add onions, garlic and begin to sweat with salt.
Cook onions until they get good color from continually cooking in the butter. Add potato starch to start thickening.
Add cream to onion mixture and bring just to a boil. Adjust seasoning with salt and pepper. Set aside.
In a large mixing bowl, add frozen diced hash browns.
To the bowl, I added the onion mixture, top the tator, bacon bits, and shredded cheddar cheese.
Mix together until well mixed.
Separate into 3 disposable pans, sprayed with non stick spray.











Top the potatoes with the reserved shredded cheddar cheese and also the crushed corn Chex.
At this point, you can bake at 425 degree F for 30-35 minutes or until golden brown. Otherwise cover, and freeze for another day.

Tingle's Random Cooking Tips: Compound Butter

Tingles thinks that we should start putting butter on everything. While I generally do like butter, I think he may be going a bit far. Apparently he kept playing music to the local cows and now has more milk that you can shake a stick at. Well, at least butter freezes, so let's get creative - Compound Butter is a great way to incorporate flavor and moisture into a dish. Flavor combinations are endless. Let's do it! Enjoy!

Gear!
2-4 Sticks Unsalted Butter
4 cloves garlic
3-4 T fresh herbs (I used parsley, basil & rosemary)
2 T. salt
1 T. pepper


Quest!
In a food processor, chop garlic cloves and herbs until fine. Add butter, cut into large cubes, salt and pepper/
Pulse until smooth and well incorporated.



With a piece of parchment paper. Empty out food processor in a lump of yummy butter.











Shape into a log; twist the ends shut and place in the fridge for about 2 hours. Enjoy!

Quest 87: Spikes

As we wander through the dark and dreary dungeons of Hyrule, we often find ourselves being chased by spikes. Well today, we are the ones who will be hunting the spikes with this delicious dish - Spike meatballs. Make sure to peek in the oven before going around the corner with this dish - Enjoy!

Gear!
1 lb. ground beef
1 small onion, chopped finely
2 t. garlic, minced
1 t. salt
1 t. pepper
1 t. parsley, dried
1/2 cup milk
1/4 cup uncooked rice, white
1 T. Italian Seasoning
24 oz. can Tomato Sauce



Quest!
Preheat oven to 400 degree F. In a mixing bowl, combine beef, onions, garlic, salt, pepper, parsley, rice & milk.

Form into meatball shapes and place in the bottom of a 9 x 13 dish that has been sprayed with cooking spray.

Mix together tomato sauce and Italian seasoning. Add a little more garlic too if you like. Pour mixture over meatballs.

Bake in the over for about 20-25 minutes or until meatballs are cooked through and rice spikes out of the sides.
Serve with baked potatoes and corn and Enjoy!

Quest 86: Berry's Cranberry Minish Muffins

Minish are cute little people and Berry is no exception. When this little girl is not fusing kinstones together for us, she has an affinity for berries. So today we are making cranberry minish muffins to both use up our extra cranberry sauce and make a tasty muffin. 

Gear!
Muffins
1/4 cup Crisco
3/4 cup sugar
1 egg
1/2 cup milk
2 cups GF flour with xanthium gum
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup cranberry sauce

Topping
1/2 cup sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon or cake spice
1/4 cup cold butter, cubed
1/4 cup slivered almonds



Quest!

Preheat oven to 375 degrees F. In a mixing bowl, add egg, milk, Crisco, sugar and mix together.


Add flour, salt and baking powder and stir until just mixed.










Add cranberry sauce and mix together until well mixed. Let mixture sit to absorb moisture into flour.









Prep muffin pan with cupcake liners that are lightly sprayed with cooking spray. Fill muffin tins about 3/4 of the way full.

Let's make a crumb topping! Add butter, sugar, flour, and cake spice to a bowl and mix together with a fork to a crumb consistency.










Add sliced almonds to the mixture and top the muffins before putting into the oven for 25-30 minutes.










Bake until toothpick comes out clean. Cool for about 5 minutes before serving.

Quest 85: Burning Bushes


I've been playing a lot of the original LOZ lately and burning bushes is quite a satisfying thing - especially when you play a randomizer and have no idea where things will end up appearing. With this in mind, this recipe reminded me of a burnt bush, but tastes a lot less like burnt. If you can find gf chow mein noodles, like I have recently, I highly suggest giving this recipe a try. Enjoy!

Gear!
12 oz. semi sweet mini chips
11 oz. caramel bits
1 cup spanish peanuts
2 cups GF chow mein noodles
1 tsp chili powder

Quest!
In a double boiler, melt the caramel bits. 

Until just melted.











Add chocolate mini chips on top. and melt into caramel.
It will be chunky and thick.











Add peanuts and chow mein noodles and stir, stir, stir.











When you can't stir anymore. place into a mixing bowl and mix together with sandwich bags on your hands until it looks like this.


Portion out on wax paper into small cookie shapes.











Place in the fridge to firm up and Enjoy!

Quest 84: Cucco Kiev


We are still cleaning up all the cuccos from the last time Link got into it with that random cucco in the village. Good thing cucco goes with everything. Today, we are adding butter to help keep them moist in the oven with cucco kiev. We will be taking from advice from Tingle with the breadcrumbs and the compound butter to help make this better. Use this recipe to entertain your friends and family or make ahead and freeze for a week night meal that is easy and delicious. Enjoy!

Gear!
4 Chicken Breasts
2 Eggs
4 T. Compound Butter
1 Cup Bread Crumbs
1/2 cup GF flour
1 t salt
1 t pepper
1 t paprika
1 t parsley, chopped


Quest!


Gather your stuff together and get your chicken breasts ready for flattening. Get three paper plates: one with flour, salt, pepper. One with lightly beaten eggs. And one for breadcrumbs, salt, pepper, paprika, parsley. Set aside to prep chicken.








Flatten your chicken breast with the use of a hammer or frying pan.












Cut 4 T of compound butter and place them in the middle of the flattened cutlets.
Tightly fold the chicken breasts together to keep the butter sealed. Use toothpicks, if necessary.












Dredge chicken in flour, then directly into the lightly beaten eggs.

Fully coat chicken in breadcrumb mixture. If you are going to freeze some of the chicken. This would be the time to portion and freeze.









Bake chicken in a dish with sides (for insurance purposes) for about 25- 30 minutes or until golden brown and chicken is 165 degree F. Serve with salad and Enjoy!

Quest 83: GF Flat Bread

Bread is something we need to make more of. It is the thing that goes with everything and is always best fresh from the oven. It can take a bit of time to make and homemade doesn't have a very long shelf life. So today, we shall make bread that is portable enough for our hero to take with him on his quest, but tasty enough it won't leave the Inn - flat bread. I have never made this had it last more than a day, but I think you can keep it wrapped up in the freezer to heat up another day. Enjoy!


Gear!
2 cups GF AP Flour Blend with xanthan gum
2 1/2 teaspoons baking powder
1 teaspoon thyme, chopped
1 teaspoon rosemary, chopped
2 cloves roasted garlic, chopped
1 teaspoon course salt
1 tablespoon garlic olive oil
3 eggs
¼ cup warm milk
½ to ¾ cup warm water


Quest!

Preheat the oven to 425 degrees F. Mix together flour, baking powder, rosemary, thyme, and salt together in a bowl.

Make a well in the middle of the bowl by pushing the flour to the sides. crack eggs into the middle. Add olive oil and garlic to the eggs.
Mix together pulling flour from the sides as you mix. until it is almost combined. Add warm water and milk. Continue to stir until completely combined. Let the mixture sit together for about 5-10 minutes.
Mixture should be pretty sticky, but more of a mass than before. If more on the thicker side, add a little more water, stir and let sit again.









On a cookie sheet lined with a silicone mat, spoon the dough into small sections and spread out with the back of the spoon. Top with a little more course salt and olive oil and bake for 15-18 minutes or until golden brown. Note: Your flat bread will take less time to cook if you spread it into larger and thinner pieces. This may require you to utilize more than one cookie sheet.
Enjoy warm! If you enjoy this flat bread like we do, it won't last long.
