Quest 94: Creamy Sundried Tomato & Pesto Cucco with Zucchini Noodles


In Breathe of the Wild I am so happy they brought back cucco corralling. This little piece of nostalgia helps bring the story back for people like me who have been playing Zelda since we were four. It is also good because it gives you a sense of purpose for a moment in the game - instead of ooh shiny! and running in the opposite direction you were heading until the next shiny thing comes along. Don't get me wrong, I am enjoying BotW, especially in Master Mode. I just have to deal with my own demons with keeping concentrated on the task at hand. Speaking of which, today's recipe is Creamy Sundried Tomotoes & Pesto Cucco with Zucchini Noodles - Say that 3 times fast. Go ahead, I'll wait..... Anyways, this recipe seems like it has a lot going on, but it really isn't too bad on the difficulty scale. More time consuming with making the zoodles. If you can handle a nest of golden bokoblins, you can handle this recipe without issue. Enjoy!

Gear!
20 oz. Chicken Breast
3 Medium Zucchini
3 T Pesto
1/4 cup. Sundried Tomatoes
1 Lemon
1/4 cup Parmesean Cheese
3 oz. Goat Cheese with Herbs
3 oz. Corn Spaghetti
1 cup Heavy Whipping Cream

Quest!
Gather your ingredients!












Trim fat from chcken breasts. Season with salt and pepper.


Cook chicken breast in a pan until just white.

Zoodle your zucchini ti make long noodles. Cut longer pieces shorted for better noodle management.

Add pesto, sundried tomatoes, lemon juice, lemon zest, goat cheese and heavy cream to the pan of chicken. Stir to help the goat cheese melt. Bring to a simmer for about 2-3 minutes.


Bring together 6 qts of boiling water with salt. Add corn spaghetti to water and cook for 5 minutes. Add zoodles and cook for 2-3 minutes.
Drain noodles.
Add noodles to chicken.
Stir.

Add Parmesean on top and enjoy!

Quest 90: Eenie and Meenie's Veggie Pasta Salad

Eenie & Meenie are at it again - this time they are sneaking veggies in through the pasta. Along with some other nummies added, this pasta salad is a hit with everyone from kids to adults. Plus it is super easy to make. Enjoy!

Gear
12 oz. Rice/Veggie Pasta
1/2 cup Miracle Whip
2 T Balsamic Vinegar
2 T. Garlic Olive Oil
Salt & Pepper
4 Large Basil Leaves
8 oz. Fresh Mozzarella Pearls
1/4 cup Roasted Red Pepper, Chopped
1/4 cup Kalamata Olives
1/4 cup Pepperoni, Chopped
1/2 cup Small Tomatoes, Quartered

Quest

Cook pasta according to direction in salted water. Rinse in cold water and set aside until ready with the dressing.
In a bowl, combine Miracle Whip, Oil, Balsamic vinegar and salt & pepper.
Prep your tomatoes, olives, and pepperoni.
Combine everything into the bowl with the dressing. Stir well to combine everything.

Quest 68: Ramen

We all know that soups show up within the Zelda franchise often and all of them work towards refueling our heart containers. Today, we are making an awesome ramen soup that is both super hearty and will turn you off from grocery store ramen (if you can even eat it) for the rest of your days. If this doesn't fill up your heart container, I am not sure what will. Enjoy!


Gear!
1 lb Flank Steak
1/4 cup Green Onions
1/2 cup Snow Peas
1/2 cup Sliced Mushrooms
3 Eggs
32 oz. Beef Broth
1 cup Water
1 t. Fresh Ginger, finely grated
1 Thai Chili, sliced thinly
1 T. Lemon Grass, sliced thinly
1 t. Cilantro, finely chopped
1 Nori Sheet, sliced thinly
GF Black Bean Noodles or Rice Noodles
salt & pepper to taste

Steak Marinade
1/4 c. Lime Juice
2 t. GF Soy Sauce
2 t.. Housin
2 t..Szechuan Sauce
2 t. Asian BBQ Sauce
2 t.Worcestershire Sauce
2 t. Roasted Garlic, minced


Quest!


Marinate your flank steak in a gallon sized zip top bag with lime juice, soy sauce, housin, szechuan, Asian BBQ, Worcestershire Sauce and Roasted Garlic. Let sit together for at least 30 minutes but an hour or two would be better.


In a small sauce pan, add 3 eggs and enough cold water to cover. Bring them up to a boil, shut the heat off and cover. Leave alone for 5 minutes.







Immediately rinse eggs under cold water. Peel eggs and set aside for later.
In a sauce pan, add beef broth, water, ginger, nori, cilantro, thai chili, about half the green onions and lemon grass.
When it comes to a boil, add GF black bean or rice noodles. cook until softened.
Notes: I don't have a specific amount for the noodles b/c everyone likes less or more noodles. I used about half a package (3 oz.) of black bean noodles for this go round.

Add sliced mushrooms to broth. Leave a few mushrooms out for garnish later. Continue cooking together.









Divide your flank steak into two pieces. This will allow it to cook more quickly.
In a cast iron frying pan, add olive oil to the pan and seer your pieces of flank steak. We are only going to give the outside a good seer. We don't want to cook the meat all the way through.

Let the meat rest for 5-10 minutes.
Very thinly slice the meat with a knife. Paper thin is what we are going for. Yes, the meat is rare in the middle - never fear - we aren't done with it yet.
Add the meat to the broth mixture - leave a few pieces off to the side so that we have some garnish.
Cook until you are happy with the flavors and doneness of the meat. Ladle into bowls.
Garnish with snow peas, eggs, mushrooms, green onions, and meat. Enjoy!

Quest 63: Jumbo Three-Cheese Seashells

Today, we make our way back to the beach for another kind seashell hunt. These stuffed little jewels have their own secret and certainly make my week! They also can be made ahead of time and frozen for a quick weeknight dinner! Enjoy!




Gear!
Jumbo GF Shell Pasta
1/2 cup onion, minced
1 clove garlic, chopped
5 oz. fresh spinach
8 oz. ricotta cheese
1/4 cup Parmesan, grated
4 oz. mozzarella, shredded
1/4 cup cream
1 egg, lightly beaten
salt and pepper to taste
2 cups red sauce

Quest!
 Saute onions and garlic in a small amount of olive oil until translucent.
 Add fresh spinach and salt and pepper to start the wilting process. Stir until fully wilted.
 Add ricotta, cream. half the Parmesan, half the mozzarella, and egg to the mixture.

  Stir mixture until it comes together into a cheese sauce.


Cook Jumbo shells according to the directions. Drain and let cool slightly before handling .

Using a small spoon, fill each shell and place in a greased 9 inch square foil pan.






Cover with your favorite red sauce.





Add the other half of the Parmesan and mozzarella. Stop right here is you wish to freeze for another day by letting everything cool, then wrap with plastic wrap and aluminum foil. Label and freeze.
When ready to bake, preheat oven to 400 degrees F and bake from fresh for about 20-25 minutes - 45-50 minutes if frozen. Enjoy!

Quest 59: GF Macaroni & Cheese

Mac n' Cheese has always been one of my favorite foods. It has been a little more of a challenge since being diagnosed with Celiac. The boxed stuff is okay, but I would like share with you this recipe. What does this have to do with the Legend of Zelda? Well let me tell you - there are cows in the LoZ; and where there are cows - there is cheese! We often overlook the cows in OoT and Majora's Mask as anything but give me milk, and I think we should celebrate them a little more!And the macaroni part is just delicious - so let's just go with it! Enjoy!

Gear!
2 cups GF Pasta - I am using Corn Ducks!
8 oz of Shredded Cheese - I an using a combination of various cheddar cheeses
2 T. Butter
2 T. Potato Starch
1/2 cup Milk
Salt and Pepper
1 cup frozen peas


Quest!
Follow the directions for you pasta. Boiling water and salting the water before adding the pasta.
While you are waiting for the pasta to cook, shred your cheese.  Use block cheese - it melts better than pre-shredded cheese.
Drain your pasta in a colander and get started on the sauce.
In the pan you cooked the pasta in, melt the butter.
Add the potato starch and salt and pepper to taste. Cook together until the roux becomes a light brown color.
Add milk and allow it come to just before a boil.
Remove from heat and add cheese. Stir until melted
Add frozen peas and stir to combine.
Fold in pasta and enjoy as a side or as a meal unto itself.

Quest 52: Lemon Cucco Quiche with Ordon Goat Cheese

Cuccos are still running amuck throughout Hyrule. Here is another recipe to help thin the population while enjoying the lovely goat cheese from Ordon. This recipe is versatile enough to make into a pasta dish and is easy enough either way for a great week night meal. Enjoy!


Gear!
1 10oz. chicken breast
1 15oz. can of artichoke hearts
3 oz. herb and garlic goat cheese
1/2 cup fresh lemon juice
1 Tablespoon capers
3 eggs
salt and pepper
1 GF pie crust

Quest!

Preheat the oven to 350 degrees F. Blind bake the crust for 10-15 minutes. 






Cut chicken breast into small pieces and cook in a pan until it turns white. 

Chop artichoke hearts into small pieces and add them to the chicken. Add lemon juice and bring to a boil.
Turn heat down to medium and stir in capers. Add goat cheese. Stir until melted.
 At this point, this dish can go a number of ways. You can use it as a pasta sauce with linguine -OR you can continue on and make a quiche.


Add filling to our pie crust from before. Scramble eggs and add it over the filling - making sure that it gets in with the filling. Bake on a baking sheet in the 350 degree F oven for about 20-25 minutes.
