Quest 106: Buffalo Cucco Dip

We still have chicken left from the last cucco attack. So today, we are going to make some party dip! Everyone loves buffalo wings and the dip is just as good. This is an easy recipe that you can start and walk away for a while in your slow cooker. 

Gear!
3 (8 ounce) packages boursin cheese (we use 2 pkgs of garlic & herb and 1 pkg of shallot & chive)
3/4 cup (6 ounces) GF buffalo wing sauce (We used Sweet Baby Ray's)
1/2 cup GF ranch dressing
1 1/4 - 1 1/2 pounds boneless, skinless chicken breast halves (3 to 4 chicken breasts)
2 cups shredded cheddar cheese
Tortilla chips, GF crackers, or vegetables, for serving

Quest!
In a crockpot, place in your chicken breasts and a 1/2 water to keep it from sticking. Cook chicken on low for about 4-5 hours. When the chicken is cooked, shred with a couple of forks. Put chicken back in the crockpot and add in buffalo wing sauce and ranch dressing. Add in the boursin cheese and stir until melted.  Add more wing sauce if you want your dip to be spicier. Put cheese on top and let melt.

Serve warm with tortilla chips, crackers, or vegetables.

Quest 93: Gohma Crab Dip


Gohma has surfaced once again and with his defeat has left plenty of crab meat to go around. Today, we have a lovely crab dip that goes well as a fondue with veggies and bread or just with crackers. It's pretty easy to prepare and makes a great quick dinner during the week as well as a fancy dip for guests. Enjoy!


Gear!
1 Can Lump Crab Meat
1 Lemon, juices and zested
1 T. Chopped Garlic
1/2 cup Roasted Red Pepper
1 T Basil leaves, chopped
1 Pkg Boursin cheese- we used the garlic and herb
1 tsp Old Bay Seasoning
1/2 cup veggie broth
salt & pepper to taste




Quest!



Saute garlic, roasted red peppers and basil leaves for a few minutes in a teaspoon
Add crab meat, lemon juice, zest, seasoning and heat through. Add cheese and veggie broth.

NOTE: If you can't find boursin cheese, you can use cream cheese, it will have a slightly different consistency, but still pretty tasty.

Your dip will be rich and creamy and ready to go. Enjoy!

Tingle's Random Cooking Tips: Aoli

Tingle is at it again and this time his rummaging through the fridge in search of who knows what. Wait . . eggs? lemons?? mustard??? garlic???? OH! Looks like our friend is going to show us a thing or two about making a form of mayonnaise called aoli. This is fantastic on sandwiches, salads or just dipping vegetables in. Enjoy!



Gear!
2 garlic cloves, finely chopped
1 large egg yolk
2 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Salt and pepper

Quest!
Add all ingredients except the olive oil into a small bowl.






Whisk together to combine. Slowly drizzle in the olive oil and continue to whisk until it becomes thick and the garlic suspends in the mixture. That's it! Store in an airtight container in the fridge and it will last about 3 days - so eat up! Enjoy!

Quest 46: Patra Cheese Plate


Having friends over for a gaming night? You should make it really fun with the food you serve. Now, there are a couple of great choices for this:

But if you are looking for something different, today we will be preparing a Patra Cheese Plate that is sure to please. Enjoy!

For Adult Patra
8 oz. Cream Cheese
4 oz. Blue Cheese
1/4 cup Walnuts, chopped
1 oz Dried Cranberries, Chopped
Blue Gel Food Coloring
Large Candy Eyes
Sliced Almonds

For Patra Larvae
8 oz. Cream Cheese
5 oz. Olde English Cheese Spread
1/4 cup Almond Slivers, Chopped
1/4 cup Maraschino Cherries, Drained and Chopped
Small Candy Eyes
Sliced Almonds

For Presentation
GF Pretzel Sticks
Sliced Apples
Gluten Free Crackers

Quest:
Adult Patra
In a medium bowl, cream together cream cheese, blue cheese, walnuts, and cranberries with a sturdy spoon. Add food coloring and mix together until a uniform color occurs.






With sandwich bags on your hands, shape the cheese ball into a potato shape. Place in the middle of your party platter and add a large candy eye. Add layers of sliced almonds to create wings.






Patra Larvae
In a medium bowl, cream together cream cheese, olde english cheese spread, almond slivers, and cherries with a sturdy spoon.







With a cookie scoop, spoon cheese mixture onto party platter circling around the adult Patra. Add a candy eye to each patra front. Add sliced almonds for wings.






Arrange crackers, apples, pretzels, and other yummies to the plate and Enjoy!!

Quest 26: Ordon Goat Cheese Pesto

Have you ever thought about the Ordon goats? They must have oodles of goat cheese everywhere. In order to help consume all this delicious goat cheese, I have come up with a recipe that can be used as a dip or a tasty dinner option - Pesto!

The Gear: 
4 oz. Basil leaves
1/2 cup Pine Nuts
2 Garlic Cloves, peeled
1 Serrano Peppers
1 T. Lemon Juice
1/3 cup Olive Oil
1 tsp. Salt
1/2 tsp. Pepper
6 oz. Goat Cheese with Herbs

The Quest:
Clean your basil. Whether you purchased it in the store or picked it from the garden, you should remove all the larger stems and rinse it in a colander until running water to remove any sand or dirt.
Thoroughly dry the basil leaves - I used a salad spinner, but blotting with paper towels could work too.








In the food processor, add your garlic and whole pepper (remove the stem). If you don't want yours so spicy, you will have to remove the seeds. Pulse about 5 times to get everything chopped small.











When you remove the lid, you may be taken aback from the strong garlic and pepper smell. This is fine, and it won't be as spicy when we are done because of the goat cheese. Add in the Pine Nuts and lemon juice. Pulse another 5 times to grind the nuts.










Add in the basil leaves, salt and pepper. Begin pulsing. Stream in olive oil through the top as you pulse. It will really pull together and make a consistent texture. Just keep checking.











At this point, you have spicy pesto, which is good, but to make it extra special and feature a major Ordon staple, we will now add the goat cheese to the food processor. Pulse 10 times to fully incorporate the goat cheese.










There you have it! Enjoy this as an appetizer dip or a great pasta sauce.
