Quest 106: Buffalo Cucco Dip

We still have chicken left from the last cucco attack. So today, we are going to make some party dip! Everyone loves buffalo wings and the dip is just as good. This is an easy recipe that you can start and walk away for a while in your slow cooker.

Gear!
3 (8 ounce) packages boursin cheese (we use 2 pkgs of garlic & herb and 1 pkg of shallot & chive)
3/4 cup (6 ounces) GF buffalo wing sauce (We used Sweet Baby Ray's)
1/2 cup GF ranch dressing
1 1/4 - 1 1/2 pounds boneless, skinless chicken breast halves (3 to 4 chicken breasts)
2 cups shredded cheddar cheese
Tortilla chips, GF crackers, or vegetables, for serving

Quest!
In a crockpot, place in your chicken breasts and a 1/2 water to keep it from sticking. Cook chicken on low for about 4-5 hours. When the chicken is cooked, shred with a couple of forks. Put chicken back in the crockpot and add in buffalo wing sauce and ranch dressing. Add in the boursin cheese and stir until melted.  Add more wing sauce if you want your dip to be spicier. Put cheese on top and let melt.

Serve warm with tortilla chips, crackers, or vegetables.

Quest 94: Creamy Sundried Tomato & Pesto Cucco with Zucchini Noodles

In Breathe of the Wild I am so happy they brought back cucco corralling. This little piece of nostalgia helps bring the story back for people like me who have been playing Zelda since we were four. It is also good because it gives you a sense of purpose for a moment in the game - instead of ooh shiny! and running in the opposite direction you were heading until the next shiny thing comes along. Don't get me wrong, I am enjoying BotW, especially in Master Mode. I just have to deal with my own demons with keeping concentrated on the task at hand. Speaking of which, today's recipe is Creamy Sundried Tomotoes & Pesto Cucco with Zucchini Noodles - Say that 3 times fast. Go ahead, I'll wait..... Anyways, this recipe seems like it has a lot going on, but it really isn't too bad on the difficulty scale. More time consuming with making the zoodles. If you can handle a nest of golden bokoblins, you can handle this recipe without issue. Enjoy!

It's grilling season once again, and with the latest (unprovoked) attack from the cuccos, we once again have an abundance of chicken hanging around to cook. With that, we thought we would continue to use the fabulous Hylian mushrooms that can be found throughout the countryside and the woods. And don't forget about the bullbo strips. Today, we are adding butter to help keep them moist in the oven with cucco kiev. We will be taking from advice from Tingle with the breadcrumbs and the compound butter to help make this better. 4 T. Compound Butter
1 Cup Bread Crumbs
1/2 cup GF flour

Quest 72: Cucco Wings

Cuccos - they help us float down and catch the rupees. They help us float to platforms that would otherwise be inaccessible to us. But once in a while, the cucco fails us or chases us in a large volume that makes us fight for our lives. With all these extra wings around, it is time to do something about it. So, today we will be dining on Cucco Wings. With two different sauces, there is lots to love. Enjoy!
Gear!
2-3 lbs Chicken Wings
Steamer Basket
Cookie Sheet
Paper Towels
Cooling Rack

Sauce 1: Blood Orange Sauce
Juice of 1 blood orange - pulp is okay
1/4 cup apple juice
1 T. GF Hoisin Sauce
1/2 tsp tamari
pinch of crushed red pepper flakes
splash of Tabasco
3 T sugar

Sauce 2: Spicy Wing Sauce
1/4 cup buffalo wing sauce
1/4 cup chili sauce
1/4 cup Asian BBQ sauce
1 tsp minced roasted garlic

Quest!
First let's render some of the fat off the chicken. Set up a steamer basket over boiling water. Place a single row of chicken wings in the steamer. Steam for approximately 7 minutes. It may take several batches to complete this part of the task.
Once the wings are steamed, place them on a cookie sheet  and cooling rack with paper towels underneath. to catch any excess moisture. Place in the fridge for a couple of hours.

Let's make sauces! For each of the sauces, mix the recipe ingredients together in a bowl. If too thick to coat wings, microwave for 30 seconds before coating wings.

Preheat oven to 450 degrees F. Remove paper toweling and place in oven for 15 minutes or until skin is crispy.
Place half the wings in each sauce.

Toss wings in the sauce.

 Enjoy with fresh paper towels.

Quest 66: Cucco Enchiladas

The cuccos are running amok once again leaving a lot of tasty tasty in their wake. So today we will put these leftovers to good use with cucco enchiladas. Enjoy!

Gear!
2 large chicken breasts
1 16 oz. can re-fried beans
1 cup rice, prepared
GF soft tortillas
8 oz. enchilada sauce
8 oz. cheddar cheese, shredded

Quest!

Acquire some chicken! I am not going to ask from where. If you can eat rotisserie chicken - good for you.  I like to slow cook my chicken breasts in tequila and lime juice and chicken broth on high for 2 hours. It shreds really easily and tastes super nummy.
Prep your soft tortillas by spreading re-fried beans on them. I am using rice flour tortillas, but corn or any kind will work as long as it is soft. Top with rice.
Rice recipe: - Makes 2+ cups of rice
1 cup rice, uncooked
2 cup water, tequila, and lime juice (that's all together 2 cups, not each)
2 T. GF Taco Seasoning Mix
1 t. Chili Powder
Bring everything up to a boil in a sauce pan. Top with a lid, shut off the heat and walk away for 20 minutes.

Add the chicken to the tortilla.
Add shredded cheese. At this point, you could also add fresh jalapenos or other favorite chili pepper.
Roll up and place in a sprayed 9 inch square pan. Repeat until the pan is full.
Top with GF enchilada sauce - I have found one I like in the store, but I am sure you can reduce down some tomato sauce in a sauce pan with chili powder and cumin and get the same effect.
Add more cheese and bake in a 400 degree F oven for 20-25 minutes or until the cheese is bubbly and delicious.
Enjoy!
