Quest 103: Rist Peninsula Cinnamon Rolls


BotW certainly had some beautiful landscapes that keeps things interesting. This is to, of course, make us curious to seek out what each area has in store. None so unique as Rist Peninsula with its swirling beach all leading to a shrine. It made me think about other things with swirls - like cinnamon rolls. Who doesn't like cinnamon rolls? Well gluten free ones are a little harder to find, but I think I have come up with a recipe that brings out the super cinnamony (yes, that's now word) flavor with a light sweet dough that does not taste or have the texture of cardboard. If you get a hankering for cinnamon rolls - give this one a try. Enjoy!

Dough
2 cups half n half
1/2 cup vegetable oil
1/2 cup sugar
2 packages active dry yeast (.25 ounce)
4+ cups gf bread flour with xanthium- we used Pamelas 
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoon salt

Filling
1/2 cup melted butter
1 cup sugar
4 T cinnamon or pie spice
1 cup brown sugar
Toasted pecans

Frosting
2 cups powdered sugar
1/4 cup half n half
2 Tablespoons melted butter
1/4 cup cream cheese, softened
Pinch of salt
2 teaspoons vanilla
1 Tablespoon Jameson

Make the dough! Bloom the yeast for about 5 minutes by warming up the half n hal in the microwave for about 30 seconds. Add yeast - make sure that you don't overheat the half n half or you will kill the yeast. Add the sugar to the yeast mixture. Once bloomed, add in veggie oil, flour, baking powder, soda and salt. Mix together in a stand mixture.If the dough is too sticky, add a little more flour.
Knead the dough for about 5 minutes. It will become pretty smooth.
Roll out dough into a rectangle about 1/4 inch thick. Mix up filling ingredients to gether. Sprinkle over dough.
Roll dough up like a jelly roll. Cut into 12 equal portions

Place rolls into greased 9 x 13 pan. Lightly cover with a tea towel and place in a warm place to rise for about an hour. Preheat oven to 400 degrees F. Bake for 35-40 minutes or undil golden brown. Mix up frosting and drizzle over warm rolls.Servce warm or room temperature. Enjoy!

Quest 100: Heart Container Cupcakes

Happy 100 Quests! We have been questing for awhile now and I wanted this post to be extra special. So today I sharing with you THE recipe for the cupcakes that are so popular with my family. I often make these for when we people over for board game days and other get-togethers. These are super chocolately and I will bet you that you can't just have one. For being gluten free, these cupcakes will definitely fill your heart container. Enjoy!

1 GF chocolate cake mix - Betty Crocker
1 GF brownie mix - Betty Crocker
6 eggs
1 cup water, hot
2 tsp instant espesso
1 stick butter (1/2 cup) softened
1 tsp vanilla
1 tsp baking powder

For this particular recipe, you do need to use these particular mixes. They normally make a small pan of brownies and a single layer cake.










In a mixer, beat eggs until light yellow.











In a measuring cup, measure out your hot water from the tap. Then add instant espresso powder. Mix and let it sit for a little bit.










Add softened butter, vanilla and baking powder to eggs. Mix until combined.











Add mixes to the bowl and stir on low. Add in espresso mix and continue to mix for 2 minutes on medium. Should be like a cake mix when done. Let this sit for at least 5 minutes for the flour to fully absorb the liquid.








Preheat the oven to 350 degree F. Get your cupcake liners ready in the pan and make sure to spray the liners with non stick spray. Spoon the cake mixture in so they come up about 3/4 of the way full. Should make 24 cupcakes.








Bake for 18-23 minutes or until a toothpick comes out clean when inserted into the cupcakes. Transfer to a wire rack and cool completely.

Once completely cooled decorate with your favorite frosting. Today with have a light pink vanilla frosting.










Add red and pink hearts to indicate how much life the hero still has. Add some extra sprinkles for fun and Enjoy!

Quest 99: Tamales with Tasty Meat Filling


Tamales are a lovely dish that can take on a number of flavors. Today we are using this as an opportunity to put tasty meat back on the menu. You remember tasty meat? It's a delicious menu item of Crescent Island. Anyways, on the off chance have some tasty meat laying around, these tamales are delicious and can be made in bulk - cuz this recipe make a lot! And frozen for another day. I recommend having a tamale party and divide the tamales among friends - plus you have helpers to get this all done. 

Gear!
3 cups masa harina
2 1/2 cups GF chicken broth 
2 T onion powder
1 T garlic powder
1 T cumin
1 T chili powder
2 t salt
1 cup lard

Filling
1 recipe of Tasty Meat

Corn husks, dried

Quest!
Soak corn husks in boiling water.


In a bowl, add masa harina and lard. Crumb together with a fork.











Bring chicken broth to a boil. Slowly add to masa mixture, incorporating after each addition. Add 1 tsp of the cumin and 1 tsp of chili powder to dough.
Prep the tasty meat. Chop into small pieces and add to a bowl.


Add remaining cumin, onion powder, garlic powder, chili powder. Adjust salt if needed.

Squish the dough into 2 inch balls. Flatten out into circle. Fill with small amount of meat mixture. Tuck dough around the meat.

Put tamale into corn husk and fold closed. Place on a plate until you have a good amount of them done. Tie together in 3s or 4s with string. Place in a steam basket and add to a pot with just enough boiling water to be below the basket. Steam in a large pot for about 40-45 minutes.

Quest 92: Bullbo Wrapped Cucco Stuffed with Hylian Shroom


It's grilling season once again, and with the latest (unprovoked) attack from the cuccos, we once again have an abundance of chicken hanging around to cook. With that, we thought we would continue to use the fabulous Hylian mushrooms that can be found throughout the countryside and the woods. And don't forget about the bullbo strips. So much good food out in the world. It would be a shame not to put it together into one fabulous meal. Enjoy!
Gear!
6 slices cheese - we used blarney castle
1 cup mushrooms
1 T butter
salt & pepper
2 chicken breasts
8 slices of bacon


Quest!
Get your grill going -you want to be nice and hot!
Slice cheese and set aside.
Melt butter in saute pan. Slice mushrooms and add to the saute pan. Add salt and pepper to taste.
Carefully, butterfly open the chicken breasts to make a pocket for our filling.
 Add cheese to each chicken breast.
 Add mushroom mixture.
 It's so pretty.
Close up chicken breasts and place each on four strips of bacon. Roll up the chicken with the bacon into a tight bundle.
 Secure with a toothpick
 Place each chicken breast on the hot grill. Turn grill to medium.
 Turn halfway through the cooking.
Watch out so the bacon doesn't catch on fire!

Cook to about 160 degrees F.
Let the chicken rest for a 5-10 minutes before serving. Serve with roasted potatoes and Enjoy!

Quest 89: Traveling to the Clouds Stew

Traveling in the clouds comes up in a number of LOZ games. The most obvious is Skyward Sword, but we a;so journey to a place in the clouds in Twilight Princess and Minish Cap. Today the weather is a little chilly and a trip to the clouds with a bowl of nummy stew is just the thing. Enjoy!


Gear!
Stew
2 lbs. chuck roast, cut into 1.2 inch cubes
2 T. potato starch
salt & pepper
3 cloves garlic, chopped
1 bay leaf
1 t. paprika
2 t. GF Worcestershire sauce
1 onion, chopped
3/4 c. red wine - I used Merlot
2 c. beef broth
1 c. carrots, chopped, 1/2 inch
2 c. potatoes, cubed 1.2 inch
1 c. green beams, quartered
bunch thyme
bunch rosemary
1/4 c dried mushrooms
1 T olive oil
1 T. butter

Dumplings
1 1/2 c AP GF Flour with xianthium gum
3 t. baking powder
1 t. salt
3/4 c milk
1/2 c. shredded cheddar
2 T. chives, chopped

 Prep chuck roast, onions, and garlic.
 Place chuck roast, salt, pepper, and potato starch in a zippy bag and mix to coat.
 In a cast iron enamel pot, melt butter and add olive oil. Add onions and sweat until translucent. Add garlic.
Add meat to pan/ Brown the meat, then add all other ingredients except the green beans.
 Cook mixture together for about an hour. Remove thyme and rosemary bunches as well as the bay leaf.

 Add green beans and simmer while we make the dumplings.











Let's make the dumplings! In a bowl, add flour, baking powder, chives and cheese. Mix together.










Add milk and stir together.
 Spoon into the top of the stew and cook 10 minutes covered, then 10 minutes uncovered.



Spoon into a bowl and Enjoy!

Quest 82: Zelda's Tea - Picnic Pie


I have always wanted to make a free standing pie. One so lovely and dense that once baked would stand up on its own without getting super gooey. Well today, we kind of did that. While this pie won't stand up by itself in the oven, it will once baked. This is similar to a British pie and I thought it appropriate to kick off our new page on Zelda's Tea Party. I will be adding cute little cakes and tea sandwiches to this page and I hope you like the idea. I find it an interesting thought to what Zelda is eating when she is not waiting to get saved. I hope you like the recipe and Enjoy!

Gear!
Spring form pan

Crust
1 1/2 sticks butter, cubed and chilled
4 tablespoons lard, cubed and chilled
2 cups GF AP flour, plus extra for rolling dough
1 teaspoon salt
1/4 cup cold water

Filling
3 T GF breadcrumbs
8 oz ricotta cheese
12 basil leaves
4 chicken sausage links, cooked and chopped
2 roasted red bell peppers
15 oz can quartered artichokes, drained and chopped
3-4 oz goat cheese with herbs
6 oz. prosciutto
1/3 c. finely shredded Parmesan cheese

Let's make pie crust! In a large bowl, add the salt, flour, lard and butter. Using a pastry blender or a couple of forks, crumb together until crumbs the size of peas form. Add about half of the water and mix together. Add a little of the time of the remaining water just until the dough begins to form. Let the dough sit for about minutes. Check the dough to see if it needs a little more water. Then divide the dough into two discs and let the dough rest in the fridge for about 30 minutes.
Roll one of the disc of dough on a lightly floured silicone mat. Spray the inside of a spring form pan with cooking spray. Shape pie crust to the inside of the spring form pan. Bake pie at 400 degrees F for 8-10 minutes.
Add a couple of tablespoons of GF bread crumbs to the bottom. This will help to catch any leftover moisture from the filling and prevent a soggy bottomed pie.
Add a layer of ricotta cheese to the crust.
Place basil leaves on the next level.
Top with chopped sausage.
Add olives, onions, garlic and mushrooms.
Layer on roasted red peppers in a single layer.
Top with drained and chopped artichoke hearts and goat cheese.
Top with prosciutto and Parmesan cheese. Press layer down with each other to fill any air holes.
Place top pie crust on top. Crimp edges and create holes in the center for steam to escape, note the triforce shape.
Bake the pie at 400 degrees F for 45-50 minutes or until pie is golden brown.
Let pie cool for 15-20 minutes. Remove the outside of the spring form pan. Cut into pie to reveal the lovely layers we have created.
Plate and enjoy hot or cold. This pie is after all designed for a picnic and is especially yummy the next day.
