Quest 101: Peanut Butter Labyrinth Cookies


Labyrinths are nothing new the LOZ franchise. We started with the lost woods that has turned up in nearly all generation from the orginial NES to the latest BOTW installment with not only the lost woods, but also two other labyrinths for us to tackle. But how do you capture that in an edible way?  Today, we will give it a try with peanut butter and chocolate goodness. The dough of this recipe is fairly sticky and delicate, but if you treat it right and are careful, they are just as good to look as they are the eat. Enjoy!

Gear!
1 cup Sugar
1 Egg
1/2 cup Butter
1/2 cup Chunky Peanut Butter
1 tsp Vanilla Extract
2 T. Milk
1/2 t. Baking Soda
1 1/2 cup GF Flour - We used Bob Red Mill's Baking Flour
12 oz. Chocolate Chips

Start by creaming together the butter, sugar, peanut butter, eggs and vanilla extract. Add in the milk and then the flour and mix together until a soft, sticky dough comes together.
Roll the dough out on a piece of parchment or large silicone mat - parchment works easier. This one is more round, but the more rectagular you can get the dough, the better.

Melt your chocolate chips either with a double boiler or carefully in the microwave. Let the chocolate cool for a minute, then spead all the chocolate over the dough and spread to the very edge.



Using the parchment paper, carefully roll the dough like a jelly roll. Make it fairly tight, so there are no air gaps between the layers. You should end up with a lovely swirl. Divide the roll in half if too large for your fridge and wrap in plastic wrap before refrigerating for at least 30 minutes.
Preheat the oven to 350 degrees F. Slice your cookies into 1/2 inch slices and place on cookie sheet with parchment or silicone mat under cookies. Bake for 8 -10 minutes until golden around the edge.















Cool cookies on the sheet pan for about 3 minutes before transfering to a cooling rack. Bake remaining cookies and Enjoy!

Quest 93: Gohma Crab Dip


Gohma has surfaced once again and with his defeat has left plenty of crab meat to go around. Today, we have a lovely crab dip that goes well as a fondue with veggies and bread or just with crackers. It's pretty easy to prepare and makes a great quick dinner during the week as well as a fancy dip for guests. Enjoy!


Gear!
1 Can Lump Crab Meat
1 Lemon, juices and zested
1 T. Chopped Garlic
1/2 cup Roasted Red Pepper
1 T Basil leaves, chopped
1 Pkg Boursin cheese- we used the garlic and herb
1 tsp Old Bay Seasoning
1/2 cup veggie broth
salt & pepper to taste




Quest!



Saute garlic, roasted red peppers and basil leaves for a few minutes in a teaspoon
Add crab meat, lemon juice, zest, seasoning and heat through. Add cheese and veggie broth.

NOTE: If you can't find boursin cheese, you can use cream cheese, it will have a slightly different consistency, but still pretty tasty.

Your dip will be rich and creamy and ready to go. Enjoy!

Quest 92: Bullbo Wrapped Cucco Stuffed with Hylian Shroom


It's grilling season once again, and with the latest (unprovoked) attack from the cuccos, we once again have an abundance of chicken hanging around to cook. With that, we thought we would continue to use the fabulous Hylian mushrooms that can be found throughout the countryside and the woods. And don't forget about the bullbo strips. So much good food out in the world. It would be a shame not to put it together into one fabulous meal. Enjoy!
Gear!
6 slices cheese - we used blarney castle
1 cup mushrooms
1 T butter
salt & pepper
2 chicken breasts
8 slices of bacon


Quest!
Get your grill going -you want to be nice and hot!
Slice cheese and set aside.
Melt butter in saute pan. Slice mushrooms and add to the saute pan. Add salt and pepper to taste.
Carefully, butterfly open the chicken breasts to make a pocket for our filling.
 Add cheese to each chicken breast.
 Add mushroom mixture.
 It's so pretty.
Close up chicken breasts and place each on four strips of bacon. Roll up the chicken with the bacon into a tight bundle.
 Secure with a toothpick
 Place each chicken breast on the hot grill. Turn grill to medium.
 Turn halfway through the cooking.
Watch out so the bacon doesn't catch on fire!

Cook to about 160 degrees F.
Let the chicken rest for a 5-10 minutes before serving. Serve with roasted potatoes and Enjoy!

Tingle's Random Kitchen Tip: Make your own GF Breadcrumbs



Gluten free breadcrumbs are expensive and don't add a lot of flavor to your meal. So, let's make use of our leftover bread - it's expensive too. Thanks to our friend Tingle, we will be making our own. This process is super easy and can be flavor adapted in a multitude of ways. Enjoy!

Gear!
1 loaf GF Bread - stale
2 cloves garlic
1 t. salt
1 T olive oil

Quest!
Preheat your oven to 400 degrees F. On a half sheet pan, lay out the bread in a single layer. Mince garlic and salt with olive oil into a paste.

Spread the paste on both sides of the bread. Bake in the over for about 10-12 minutes or until bread is golden and toasty.

Let toast cool.




Add the toast to a food processor. In batches, depending on how much toast you have made and the size of your food processor. pulse into small crumbs.

Like this!












Bag up, mark and freeze until ready to use.

Quest 91: Zora Eggs

Zoras have not been mentioned in our questing as of yet. Well today, we have prepared for you a lovely batch of Zora eggs. This rich and creamy dish is the prefect end to any meal. Enjoy!

Gear!
1 cup small tapioca pearls - not quick cooking
1 can of coconut milk
2 T. honey
1 tsp. vanilla paste
1 tsp. cinnamon
1 egg, separated

Quest!

Add tapioca pearls to a sauce pan.

Add coconut milk and bring up to a simmer.
Add honey, vanilla and cinnamon.
Cook until tapioca is plumped and start to look like fish eggs. Turn heat off and let cool slightly.
Separate your egg into two different bowls.
Beat egg whites until they come to a stiff peak. You can do this by hand or with a mixer.
Added egg yoke to the mixture and stir.

Until creamy and egg is cooked.Fold in egg whites to lighted up mixture.

Serve warm or cold with a dolup on whipped cream on top.

Quest 87: Spikes

As we wander through the dark and dreary dungeons of Hyrule, we often find ourselves being chased by spikes. Well today, we are the ones who will be hunting the spikes with this delicious dish - Spike meatballs. Make sure to peek in the oven before going around the corner with this dish - Enjoy!

Gear!
1 lb. ground beef
1 small onion, chopped finely
2 t. garlic, minced
1 t. salt
1 t. pepper
1 t. parsley, dried
1/2 cup milk
1/4 cup uncooked rice, white
1 T. Italian Seasoning
24 oz. can Tomato Sauce



Quest!
Preheat oven to 400 degree F. In a mixing bowl, combine beef, onions, garlic, salt, pepper, parsley, rice & milk.

Form into meatball shapes and place in the bottom of a 9 x 13 dish that has been sprayed with cooking spray.

Mix together tomato sauce and Italian seasoning. Add a little more garlic too if you like. Pour mixture over meatballs.

Bake in the over for about 20-25 minutes or until meatballs are cooked through and rice spikes out of the sides.
Serve with baked potatoes and corn and Enjoy!

Quest 84: Cucco Kiev


We are still cleaning up all the cuccos from the last time Link got into it with that random cucco in the village. Good thing cucco goes with everything. Today, we are adding butter to help keep them moist in the oven with cucco kiev. We will be taking from advice from Tingle with the breadcrumbs and the compound butter to help make this better. Use this recipe to entertain your friends and family or make ahead and freeze for a week night meal that is easy and delicious. Enjoy!

Gear!
4 Chicken Breasts
2 Eggs
4 T. Compound Butter
1 Cup Bread Crumbs
1/2 cup GF flour
1 t salt
1 t pepper
1 t paprika
1 t parsley, chopped


Quest!


Gather your stuff together and get your chicken breasts ready for flattening. Get three paper plates: one with flour, salt, pepper. One with lightly beaten eggs. And one for breadcrumbs, salt, pepper, paprika, parsley. Set aside to prep chicken.








Flatten your chicken breast with the use of a hammer or frying pan.












Cut 4 T of compound butter and place them in the middle of the flattened cutlets.
Tightly fold the chicken breasts together to keep the butter sealed. Use toothpicks, if necessary.












Dredge chicken in flour, then directly into the lightly beaten eggs.

Fully coat chicken in breadcrumb mixture. If you are going to freeze some of the chicken. This would be the time to portion and freeze.









Bake chicken in a dish with sides (for insurance purposes) for about 25- 30 minutes or until golden brown and chicken is 165 degree F. Serve with salad and Enjoy!
