Quest 104: Fudge Mud Puddles


Breathe of the Wild seems to have a number of muddy regions. They start our training into mud on the Great Plateau with a small muddy lake that contains a treasure chest. We get more from the wasteland region that will suck you in if you make one false step in the tower's direction. So today, we are stepping in our own mud puddle in a more delicious rendition. As usual it's all gluten free. Enjoy!

Gear!
Mini muffin tin
Melon baller
Double boiler

Cookie
1/2 cup butter
1/2 cup crunchy peanut butter
1/2 cup sugar
1/3 cup dark brown sugar
1 egg
1/2 t. GF vanilla
1 1/4 c. GF All Purpose with xianthium gum
3/4 t. baking soda
1/2 t. salt

Fudge Filling
1 cup (6 oz,) milk chocolate chips
1 cup (6 oz,) semi-sweet chocolate chips
1 can (14 oz) sweetened condensed milk
1 t. GF vanilla
Chopped candied peanuts (optional)

Quest!

Preheat the oven to 320 degree F. 

First start off making the batter for the cookie part. 

Using the creaming method, combine butter, sugar, brown sugar, peanut butter, and egg. Then add vanilla, flour, baking soda and salt. Don't forget to let your dough sit for about 5 minutes. 

Make into 1 inch balls and place in a mini muffin tin. Do not press down at all.

Note: I have been mixing flour brands for my recipes lately and have gotten better results. If you can afford it, I recommend buying two different brands of AP GF flour and using 50/50 in your baking.

Bake for 14-16 minutes. They will be baked on the outside but squishy in the middle. (Yes, that is a technical term). Remove from oven. With your melon baller, make a well inside the underdone cookie. 

Leave the cookies in the hot pan. Like magic, the cookies will finish cooking right on your counter. Set aside until cooled.

Note: I had additional batter and didn't want to wait, so I divided the rest of the batter between two mini spring form pans to make two larger ones. These baked for about 5 minutes more than the little ones did. Then I made a well in the bottom just like the others and let them finish on the counter. 

Now for the mud!
In a double boiler, our in all the chips and sweetened condensed milk. Bring up to temperature until smooth. 

Once rich and smooth, you can simply spoon into each of your cups - right to the top! 

Note: Work fast with this mixture, it cools quickly and becomes a fudgy mess. You can reheat on the stove if necessary. 

If you want to make them extra special, you can chop candied peanuts and sprinkle on top.

Quest 102: Lime ChuChu Cookies

Chuchus are everywhere, but my favorite are the creepy version that shows up in Majora's Mask. The expression of the face and the fact that you can see what you will get as a reward are just too much. Today, we will capture these creepy little guys in a cookie with a sour twist - Lime ChuChu Cookies. They are basically a box of lime gelatin that got together with a sugar cookie. Surprisingly good with the sweet and sour combination. These are just about the simplest thing you can make. Enjoy!

Gear!
1-1/2 cups butter, softened
1 cup sugar
2 packets (3 oz) Lime Flavored Gelatin, divided
1 egg
1 tsp. vanilla
3-1/2 cups gluten free AP flour with xanthium gum - We used Pamela's!
1 tsp. baking powder
Candied eyes, heart pieces
Green Sugar Glitter


Quest!
Preheat the oven to 400 degrees F. 

Cream together butter, sugar and 1 of the gelatin packets. Add egg and vanilla, Stir. Add in Flour and baking powder. Stir to combine. Let dough sit for 10 minutes.

Pour our second gelatin packet onto a plate. Form dough into 1 inch balls and dip into gelatin powder. Place on a baking sheet and with a cookie stamp or bottom of a flat glass, press each cookie flat. Add eyes, heart piece and additional sugar glitter. 

Bake for 8-10 minutes or until just turning golden. 

Cool on sheet for a minute or two before transferring to a cooling rack. 

Repeat until all cookies are baked.

Quest 101: Peanut Butter Labyrinth Cookies


Labyrinths are nothing new the LOZ franchise. We started with the lost woods that has turned up in nearly all generation from the orginial NES to the latest BOTW installment with not only the lost woods, but also two other labyrinths for us to tackle. But how do you capture that in an edible way?  Today, we will give it a try with peanut butter and chocolate goodness. The dough of this recipe is fairly sticky and delicate, but if you treat it right and are careful, they are just as good to look as they are the eat. Enjoy!

Gear!
1 cup Sugar
1 Egg
1/2 cup Butter
1/2 cup Chunky Peanut Butter
1 tsp Vanilla Extract
2 T. Milk
1/2 t. Baking Soda
1 1/2 cup GF Flour - We used Bob Red Mill's Baking Flour
12 oz. Chocolate Chips

Start by creaming together the butter, sugar, peanut butter, eggs and vanilla extract. Add in the milk and then the flour and mix together until a soft, sticky dough comes together.
Roll the dough out on a piece of parchment or large silicone mat - parchment works easier. This one is more round, but the more rectagular you can get the dough, the better.

Melt your chocolate chips either with a double boiler or carefully in the microwave. Let the chocolate cool for a minute, then spead all the chocolate over the dough and spread to the very edge.



Using the parchment paper, carefully roll the dough like a jelly roll. Make it fairly tight, so there are no air gaps between the layers. You should end up with a lovely swirl. Divide the roll in half if too large for your fridge and wrap in plastic wrap before refrigerating for at least 30 minutes.
Preheat the oven to 350 degrees F. Slice your cookies into 1/2 inch slices and place on cookie sheet with parchment or silicone mat under cookies. Bake for 8 -10 minutes until golden around the edge.















Cool cookies on the sheet pan for about 3 minutes before transfering to a cooling rack. Bake remaining cookies and Enjoy!

Quest 61: Rabbit Droppings

Rabbits work there way into many Legend of Zelda games, but whether it is Link turning into one or they are hiding behind rock on the Spirit Tracks - they all make poo. So, today's recipe is Rabbit Droppings, but we think you will like them because they are really egg free oatmeal chocolate chip cookie dough - so you don't have to worry about getting sick from uncooked eggs. Not that it ever stopped us from eating cookie dough before. Oh well, Happy Easter & Enjoy!



Gear!
1/4 cup butter, melted and cooled
1/4 cup dark brown sugar
2 Tablespoons milk
1/2 teaspoon vanilla extract
3/4 cup GF flour blend with xanthum gum
1/3 cup GF quick oats
1/4 cup mini chocolate chips
1/4 cup finely chopped walnuts


Quest!
Mix together the melted butter and brown sugar. Add a Tablespoon of milk, vanilla extract, and stir until combined.







Add the gluten-free flour and quick oats and stir until combined. If it is too dry for your purposes add a little more milk and stir until smooth.






Stir in the mini chocolate chips and then dig in!








Shape into small balls and Enjoy

Quest 49: Monster Parts Cookies

Ever wonder what happens to all the enemies that Link defeats? Well their parts are most likely scattered around Hyrule and they are starting to stack up. So today was are going to take some of those parts and make monster cookies. Enjoy!

Gear!
1 1/2 cups chunky peanut butter
1 cup packed dark brown sugar
1 cup  sugar
8 tablespoons butter, softened
3 large eggs
1 tablespoon vanilla extract
4 1/2 cups quick cooking oats
2 teaspoons baking soda
1 cup semi-sweet or dark chocolate chips
1 cup M&M's plain chocolate candies
1/3 cup sweetened chipped coconut
candied eyes, claws, teeth beaks - really whatever you have

Quest!

Preheat oven to 350 degrees F. In a mixing bowl, put together peanut butter, sugar, brown sugar and butter. Mix together until combined.
Mix in eggs, vanilla and baking soda.
Until creamy!
Add in your mix-ins: M&Ms, coconut and dark chocolate chips is what we used.
Mix in oatmeal until well combined.
Spoon 1 inch balls of dough onto a parchment lined sheet pan. Add your candy eyes, teeth, breaks, claws, etc. to each cookie.
Once they look somewhat like this bake for 15-20 minutes until golden brown around the edges.
Cool on a cooling rack after baking and Enjoy!

Quest 38: A Trip to the Beach on Koholint Island

Today, we make our journey to the Koholint Island for a little time on the beach. I was thinking about worms in the dirt the other day and since I have not made it since going GF, I figured the sky was the limit and I could make it any way I wanted. So that is just what we are doing. Using more neutral tones and not so much on the dark Oreos and chocolate pudding that we are used to, we shall depict the scene in which Link will find his sword. This recipe is so easy and your kids will love it too.  Enjoy!

3.9 oz Vanilla Pudding mix
3.9 oz Butterscotch Pudding mix
4 cups of cold milk, divided
8oz. Cool-whip, divided
Blue Food Coloring - Gel type
Variety of GF Cookies: Wafer cookies, sugar cookies, Anne's Bunnies, etc.
1/2 cup of Walnuts - optional
4 oz. Cream Cheese
1 cup GF Chocolate Cookies, crumbed - I used Annie's Bunnies
Candy Pearls
Small Mint leaves

The Quest!
Let's set the scene! First, make your puddings in separate bowls according to the directions - with the milk :)







Add 1/2 the Cool-Whip to each of the puddings, folding gently. This will tone down the colors and add volume.







Divide the Vanilla pudding into two parts. Add blue food coloring to one of the bowls. Set puddings aside.







In a 8 or 9 inch square baking dish, put a layer of crushed cookies - I used sugar cookies.







Add a layer of butterscotch pudding over the first layer of cookies. Add the walnuts over the butterscotch pudding. If you have a nut allergy or if nuts just are not your thing, you can put another layer of cookies here.





Being careful, add the blue pudding to the bottom of the half of the square. Then add the remainder of the vanilla pudding. spread it out to make a 50/50 shoreline.






Add dollops of butterscotch pudding to the yellow part of the shore.








Using a toothpick, swirl the beach to make a two-toned effect. Just be sure to stay out of the ocean!







Add some wafer cookies to build dimension over the world. Fill in these areas with butterscotch pudding. Note: I did end up with extra butterscotch pudding - it was delicious!






Take a light colored wafer cookie, separate a layer and cut it down so it looks like a broken board. Add some left over Cool-Whip to make waves in the water.







Let's finish it off with cookie balls!
Cookie balls are super easy - cookie crumbs and cream cheese - That's it.

In order to keep the mess down, we mash my cookies in a zippy bag with a rolling pin and add the softened cream cheese to the bag. Work it together in the bag. we used both a small scoop and a medium scoop for this project. The small makes the sand dune. The large makes the sea urchin.




For the sea urchin, we made a ball and rolled it in candy pearls. Added a little leftover cream cheese for the eyes. For the sand dune, we added a couple of dried mint leaves - it was all I had, but you could definitely use fresh.





And for the final step, we added the sword that Link will come find - we know it's his because it has his hand on it! Ewww!

Quest 34: 8-bit cookies revisited: Navi Cookies

Now, the last time we tried 8-bit cookies, Link turned out -  a little deformed for lack of a better word. I have to admit, it was complex and a little ambitious for a first try with the Play-doh fun factory. However, upon reflection it was a good experience that taught us a lot about this process and the amount of  patience needed to complete such a task. Having taken all of this into consideration, it is time to try again in a more simplified way - Navi cookies. Now, we have added the extra task of making these cookies gluten free, but I think we are up to the challenge. I hope you enjoy this redo and even give this a try yourself. It is not for the faint of heart, but it can be a very cool process nonetheless. Enjoy!

2 cups AP gluten free flour with xanthium gum added
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup granulated sugar
4 tablespoons powdered sugar
8 tablespoons (1 stick) unsalted butter softened
1 large egg, beaten
1/2 teaspoon pure vanilla extract

Black Gel Food Coloring
Dark Blue Gel Food Coloring
Play-doh Fun Factory
Plastic wrap

Quest: 
Let's make the dough! Cream the sugars and butter together, add egg and vanilla. Mix in flour, salt, baking powder. You have yourself a nice little dough!

Now the math comes in. In the last try at this, I failed miserably at part, but since I only have three colors, it should be much easier.

Here is your spreadsheet to help you out.

Divide the dough into three parts keeping in mind the percentages that you need for each. Wrap the largest in plastic wrap. Take the middle sized piece of dough and color it blue. Take the smallest and color it black. Wrap each piece in plastic wrap and let dough rest in the refrigerator for about an hour.

Prep your Play-doh fun factory by spraying it with some non stick spray - you will thank me later!








Using a little more math, we need to divide up the dough so that we will get the proper number of pixels in our cookies. Take the number of plain pixels for example, and divide it by 4 since we will get 4 pixels per press through the Fun Factory. In this case we get 18.something, meaning we will need 18 and some extra to splice the last piece. Black is easy - 6. And Blue is 10 and change.



Make sure you have a lot of room to do this part. We have a number of silicone mats that we will placing out pieces out on so they do not stick. Run your dough through the Fun Factory in this order: Plain, Blue, Black. If you don't do this, you will get dough that is multicolored.

Once you get all your pieces made, it's time to assemble. Start with the bottom of the picture and build up. Take your time and make sure that each pixel lines up. Square the cookie each row to make sure you are making a consistent shape. I also gently pressed the new layer to the previous layer.




Wrap the whole thing in plastic wrap and place in the freezer for at least 4 hours - I left mine overnight.

Preheat your oven to 375 degrees F. Remove your cookies from the freezer to a cutting board. Cut the cookie block in half to see how you did!





Slice cookies and place on a sheet pan prepped with a silicone mat. Bake for 12-14 minutes or until light golden brown. Transfer to a cooking rack and Enjoy!

Quest 25: Lemon WindFish Egg Cookies

Nothing is better than cookies, except for maybe more cookies. This recipe is a delicate lemon sugar cookie that is super simple to make. These cookies are freezer cookies, so plan ahead when making them. In true LOZ fashion, we are shaping this cookies into triangle shapes to so when they bake, they look like Windfish eggs! And rolling the cookies in pink sugar to make them shine really makes them pop. These cookies will be put you in the mood for spring - even though it's still snowing here. :(  
Gear
2 cups GF AP flour with xanthan gum
1 cup confectioners' sugar
 1 teaspoon coarse salt
1 tablespoon lemon zest
1 teaspoon fresh lemon juice
1 cup (2 sticks) unsalted butter, cut into pieces
2 large egg yolks
1/4 cup Pink Decorating Sugar

Quest
In a food processor, pulse flour, confectioners' sugar, salt, and lemon zest until combined. Add butter and process until sandy.  

Add egg yolks and lemon juice; pulse until dough comes together. Divide dough in half and form each into a 2-inch-wide log. 

Wrap in plastic and form into a triangle log. Freeze until firm, at least 3 hours but could last up to a month!

Preheat oven to 350 degrees.  Spread granulated sugar on a piece of parchment; roll logs over pink sugar to coat. 


Slice logs into 1/4-inch-thick slices and arrange, 1 inch apart, on two parchment-lined baking sheets or use baking mats. 


  1. Bake until cookies are golden brown around edges, about 15 minutes, rotating sheets halfway through. Transfer cookies to wire racks to cool.
