Quest 102: Lime ChuChu Cookies

Chuchus are everywhere, but my favorite are the creepy version that shows up in Majora's Mask. The expression of the face and the fact that you can see what you will get as a reward are just too much. Today, we will capture these creepy little guys in a cookie with a sour twist - Lime ChuChu Cookies. They are basically a box of lime gelatin that got together with a sugar cookie. Surprisingly good with the sweet and sour combination. These are just about the simplest thing you can make. Enjoy!

Gear!
1-1/2 cups butter, softened
1 cup sugar
2 packets (3 oz) Lime Flavored Gelatin, divided
1 egg
1 tsp. vanilla
3-1/2 cups gluten free AP flour with xanthium gum - We used Pamela's!
1 tsp. baking powder
Candied eyes, heart pieces
Green Sugar Glitter


Quest!
Preheat the oven to 400 degrees F. 

Cream together butter, sugar and 1 of the gelatin packets. Add egg and vanilla, Stir. Add in Flour and baking powder. Stir to combine. Let dough sit for 10 minutes.

Pour our second gelatin packet onto a plate. Form dough into 1 inch balls and dip into gelatin powder. Place on a baking sheet and with a cookie stamp or bottom of a flat glass, press each cookie flat. Add eyes, heart piece and additional sugar glitter. 

Bake for 8-10 minutes or until just turning golden. 

Cool on sheet for a minute or two before transferring to a cooling rack. 

Repeat until all cookies are baked.

Quest 95: Crescent Island Tropical Meatballs


On my last trip to Crescent Island in Oracle of Ages, I admired the tropical theme and started thinking about recipes that involved pineapple and other tropical fruits. I also like the flavors of sweet and sour, but it is hard to find at a restaurant that is gluten free. So with all of this in mind, I give you Crescent Island Tropical Meatballs - Enjoy!

Gear!
1 1/2 lb ground beef
3/4 c GF bread crumbs
1/2 c finely minced onion
1 egg
1 t course salt
1/4 c milk
1/2 t freshly grated ginger
2 T cornstarch
1/2 c dark brown sugar
1 can pineapple chunks, in juice
1/3 c white vinegar
1 T tamari or GF Soy Sauce
1/2 c sweet peppers, chopped

Note: This is the stove top version of this recipe, but this can easily be transferred to a slow cooker application. Enjoy!
 Let's make the meatballs! In a bowl, add beef, bread crumbs, onion, egg, salt, ginger and milk. Mix together - though you don't want to over mix. Shape into 1 1/2 inch meatballs.

 Mix cornstarch and brown sugar in enamel dutch oven.
 Add pineapple juice - hold onto the chunks for now. Add in vinegar and tamari. Stir until smooth.
 Cook over medium heat, stirring constantly until mixture become thick and bubbly. Boil for 1 minute.
 Add pineapple chunks and bell peppers - shredded carrots might be lovely as well.

 Add in meatballs and cook covered for 12-15 minutes until cooked through over medium heat. It might be nice to start some rice too.
 All cooked through!

Serve over rice and enjoy!

Quest 88: Loaded Cheesy Toto Potatoes


The Oracle of Ages Manga brings us potatoes beyond our friends Eenie and Meenie's garden. With this, I would like to share with you a make ahead side dish that is delicious and of course gluten free. It starts with making a cream of onion sauce and just gets yummier from there. Enjoy!


Gear!
1/4 cup chopped onions
1 clove garlic
4 T Butter
salt & pepper to taste
2 T. potato starch
1/4 cup cream
32 oz. diced potatoes
6 oz. Top the Tator or sour cream
4 slices bacon, crumbled
4 oz. cheddar cheese, shredded divided
1 T parsley
1/2 cup corn Chex cereal, crushed


Quest!

Melt butter in a saucepan. Add onions, garlic and begin to sweat with salt.
Cook onions until they get good color from continually cooking in the butter. Add potato starch to start thickening.
Add cream to onion mixture and bring just to a boil. Adjust seasoning with salt and pepper. Set aside.
In a large mixing bowl, add frozen diced hash browns.
To the bowl, I added the onion mixture, top the tator, bacon bits, and shredded cheddar cheese.
Mix together until well mixed.
Separate into 3 disposable pans, sprayed with non stick spray.











Top the potatoes with the reserved shredded cheddar cheese and also the crushed corn Chex.
At this point, you can bake at 425 degree F for 30-35 minutes or until golden brown. Otherwise cover, and freeze for another day.

Quest 83: GF Flat Bread

Bread is something we need to make more of. It is the thing that goes with everything and is always best fresh from the oven. It can take a bit of time to make and homemade doesn't have a very long shelf life. So today, we shall make bread that is portable enough for our hero to take with him on his quest, but tasty enough it won't leave the Inn - flat bread. I have never made this had it last more than a day, but I think you can keep it wrapped up in the freezer to heat up another day. Enjoy!


Gear!
2 cups GF AP Flour Blend with xanthan gum
2 1/2 teaspoons baking powder
1 teaspoon thyme, chopped
1 teaspoon rosemary, chopped
2 cloves roasted garlic, chopped
1 teaspoon course salt
1 tablespoon garlic olive oil
3 eggs
¼ cup warm milk
½ to ¾ cup warm water


Quest!

Preheat the oven to 425 degrees F. Mix together flour, baking powder, rosemary, thyme, and salt together in a bowl.

Make a well in the middle of the bowl by pushing the flour to the sides. crack eggs into the middle. Add olive oil and garlic to the eggs.
Mix together pulling flour from the sides as you mix. until it is almost combined. Add warm water and milk. Continue to stir until completely combined. Let the mixture sit together for about 5-10 minutes.
Mixture should be pretty sticky, but more of a mass than before. If more on the thicker side, add a little more water, stir and let sit again.









On a cookie sheet lined with a silicone mat, spoon the dough into small sections and spread out with the back of the spoon. Top with a little more course salt and olive oil and bake for 15-18 minutes or until golden brown. Note: Your flat bread will take less time to cook if you spread it into larger and thinner pieces. This may require you to utilize more than one cookie sheet.
Enjoy warm! If you enjoy this flat bread like we do, it won't last long.

Quest 81: Eenie and Meenie's Brussels Sprouts with Bullbo Strips

Today, Eenie & Meenie want to remind us to eat our vegetables. They never said we had to eat them steamed and lightly salted - so today, we are going to jazz up Brussels Sprouts with some bacon! Now I understand that Brussels Sprouts have a bad rap from what we have done to vegetables over time - you know about all the creaming they have taken! But I assure you that will a little care, these little cabbages will be on your menu too. Enjoy!

Gear!
1-2 lbs Brussels Sprouts
1/2 lb. Bacon, uncooked
Salt & Pepper
Mandolin with guard
Non stick pan

Quest!


Very carefully, slice on the second thinnest setting on your mandolin. Make sure to use the hand guard!
That's nice! Once all of the sprouts are done, set aside.
Cut bacon into small bite-sized pieces. Add to a non stick pan and place on low to render out some of the fat.
Once the bacon is cooked about half-way through, add the sprouts. Add a little salt and pepper.
Continue cooking until bacon is fully cooked. Adjust seasoning as needed.
There you have it! This is a great dish because you get all the smoky flavor from the bacon into the sprouts. The sprouts get a little char to them without getting burnt. The only thing that would make this better is if we added potatoes - which is really good too. BTW, if you want to do that, add the potatoes with the bacon at the beginning. Add the sprouts in the same place in cooking to the bacon. Enjoy!

Quest 73: Eenie & Meenie's Veggie Lasagna

Eenie and Meenie's garden is looking pretty good these days. So today, I thought we could share a great vegetarian lasagna recipe that uses some great vegetables. Enjoy!









Gear!
2 small Zucchini Squash
8 oz. Ricotta cheese
4 T. Pesto (recipe here)
1 Egg
2 cups Mozzarella cheese, divided
1/2 cup Parmesan cheese
2 cups of Spaghetti Sauce
1 cup Roasted Red Peppers, chopped
2 cups Spinach Leaves
Box of Oven Ready GF Lasagna Noodles
Salt and Pepper

Quest!

Slice zucchini 3/16 thick with a mandeline. Be careful to use the guarding to keep your digits safe.

Place zucchini slices on paper towels and set a side to dry in the refrigerator for about 4 hrs.
In the meantime, let's make some cheese filling.
Mix together, ricotta cheese, 1cup mozzarella cheese, Parmesan, pesto, salt and pepper. Refrigerate until ready to use.
In the bottom of a 8x8 pan place about 1/3 of sauce.
Add a layer of lasagna noodles.
Add a layer of cheese mixture.

Add another layer of lasagna noodles. Followed by a layer of spinach leaves.
Add a layer of zucchini slices
Add a layer of roasted red peppers
Add another 1/3 of the sauce.
Continue layering until you run out of room.. Top with  remaining cup of mozzarella cheese.

From here you can freeze this delight and bake another day at 400 degrees F for about 45-50 minutes.

Or, you can bake it now at 400 degrees F for about 30-35 minutes or until golden brown.

Quest 72: Cucco Wings


Cuccos - they help us float down and catch the rupees. They help us float to platforms that would otherwise be inaccessible to us. But once in a while, the cucco fails us or chases us in a large volume that makes us fight for our lives. With all these extra wings around, it is time to do something about it. So, today we will be dining on Cucco Wings. With two different sauces, there is lots to love. Enjoy!
Gear!
2-3 lbs Chicken Wings
Steamer Basket
Cookie Sheet
Paper Towels
Cooling Rack

Sauce 1: Blood Orange Sauce
Juice of 1 blood orange - pulp is okay
1/4 cup apple juice
1 T. GF Hoisin Sauce
1/2 tsp tamari
pinch of crushed red pepper flakes
splash of Tabasco
3 T sugar

Sauce 2: Spicy Wing Sauce
1/4 cup buffalo wing sauce
1/4 cup chili sauce
1/4 cup Asian BBQ sauce
1 tsp minced roasted garlic

Quest!
First let's render some of the fat off the chicken. Set up a steamer basket over boiling water. Place a single row of chicken wings in the steamer. Steam for approximately 7 minutes. It may take several batches to complete this part of the task.
Once the wings are steamed, place them on a cookie sheet  and cooling rack with paper towels underneath. to catch any excess moisture. Place in the fridge for a couple of hours.


 Let's make sauces! For each of the sauces, mix the recipe ingredients together in a bowl. If too thick to coat wings, microwave for 30 seconds before coating wings.

 Preheat oven to 450 degrees F. Remove paper toweling and place in oven for 15 minutes or until skin is crispy.
Place half the wings in each sauce.

Toss wings in the sauce.

 Enjoy with fresh paper towels.
