Quest 105: Apple Frittata

 

We have 500 apples in our inventory in case of dire emergency on our BoTW game. It takes quite a few apples to fill Link's hearts up when down to half a heart with uncooked apples. Trust me, it's happened to all of us. It's fine. But with all these apples, we have a super easy recipe to cook up two of them. Enjoy!

Gear!
6 large eggs
2 T Half 'n Half
2 T maple syrup
1 T cinnamon, plus a 1 tsp
2 t pie spice
2 t vanilla sugar
Pinch of kosher salt
2 large apples - your favorite


Quest!


Preheat the oven to 325 degrees F. Prep a round oven safe dish with butter.

In a bowl, whip together eggs, half'n half, maple syrup, 1 T cinnamon and pie spice. 











Choose whether or not you want to peel your apples, but make sure to core them and slice into even slices. Arrange apples into the dish.













Pour egg mixture over apples. 















Bake for 30-35 minutes.

Quest 103: Rist Peninsula Cinnamon Rolls


BotW certainly had some beautiful landscapes that keeps things interesting. This is to, of course, make us curious to seek out what each area has in store. None so unique as Rist Peninsula with its swirling beach all leading to a shrine. It made me think about other things with swirls - like cinnamon rolls. Who doesn't like cinnamon rolls? Well gluten free ones are a little harder to find, but I think I have come up with a recipe that brings out the super cinnamony (yes, that's now word) flavor with a light sweet dough that does not taste or have the texture of cardboard. If you get a hankering for cinnamon rolls - give this one a try. Enjoy!

Dough
2 cups half n half
1/2 cup vegetable oil
1/2 cup sugar
2 packages active dry yeast (.25 ounce)
4+ cups gf bread flour with xanthium- we used Pamelas 
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoon salt

Filling
1/2 cup melted butter
1 cup sugar
4 T cinnamon or pie spice
1 cup brown sugar
Toasted pecans

Frosting
2 cups powdered sugar
1/4 cup half n half
2 Tablespoons melted butter
1/4 cup cream cheese, softened
Pinch of salt
2 teaspoons vanilla
1 Tablespoon Jameson

Make the dough! Bloom the yeast for about 5 minutes by warming up the half n hal in the microwave for about 30 seconds. Add yeast - make sure that you don't overheat the half n half or you will kill the yeast. Add the sugar to the yeast mixture. Once bloomed, add in veggie oil, flour, baking powder, soda and salt. Mix together in a stand mixture.If the dough is too sticky, add a little more flour.
Knead the dough for about 5 minutes. It will become pretty smooth.
Roll out dough into a rectangle about 1/4 inch thick. Mix up filling ingredients to gether. Sprinkle over dough.
Roll dough up like a jelly roll. Cut into 12 equal portions

Place rolls into greased 9 x 13 pan. Lightly cover with a tea towel and place in a warm place to rise for about an hour. Preheat oven to 400 degrees F. Bake for 35-40 minutes or undil golden brown. Mix up frosting and drizzle over warm rolls.Servce warm or room temperature. Enjoy!

Quest 86: Berry's Cranberry Minish Muffins

Minish are cute little people and Berry is no exception. When this little girl is not fusing kinstones together for us, she has an affinity for berries. So today we are making cranberry minish muffins to both use up our extra cranberry sauce and make a tasty muffin. 

Gear!
Muffins
1/4 cup Crisco
3/4 cup sugar
1 egg
1/2 cup milk
2 cups GF flour with xanthium gum
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup cranberry sauce

Topping
1/2 cup sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon or cake spice
1/4 cup cold butter, cubed
1/4 cup slivered almonds

Preheat oven to 375 degrees F. In a mixing bowl, add egg, milk, Crisco, sugar and mix together.


Add flour, salt and baking powder and stir until just mixed.










Add cranberry sauce and mix together until well mixed. Let mixture sit to absorb moisture into flour.









Prep muffin pan with cupcake liners that are lightly sprayed with cooking spray. Fill muffin tins about 3/4 of the way full.

Let's make a crumb topping! Add butter, sugar, flour, and cake spice to a bowl and mix together with a fork to a crumb consistency.










Add sliced almonds to the mixture and top the muffins before putting into the oven for 25-30 minutes.










Bake until toothpick comes out clean. Cool for about 5 minutes before serving.

Quest 80: Din's Fire Pepper Jelly

Ocarina of Time is a great game - one of my top 5 Zelda games. In trying to do something a little different, I want to share with you something that I have been making for quite sometime - pepper jelly. This particular pepper jelly is both sweet and spicy and works very well as an appetizer on a bed of cream cheese or in the morning on toast for a savory pick me up. The color of this jelly is bright and beautiful, and it reminds me of Din's Fire from Ocarina of Time. I hope you enjoy this recipe - I know my family sure does. Enjoy!

8 8oz canning jars
8 matching canning lids
8 canning rings
2 large red bell peppers
1 large green bell pepper
2 habanero peppers
2 cups cider vinegar
1 pkg. powdered pectin
6 cups sugar

Let's refresh our memories about canning from Quest 3: Red Chu Jelly

The purpose of canning is so that your food will last for a long, long time. It cannot do that if there are microbial organisms living with it. So what do we do? We kill ‘em all! . . . Well, as many as possible. Throughout the canning process, it is important to have a pot of almost boiling water on hand to put things like spoons and ladles in so they stay sterile as we go.

You will need to acquire (through legal means) a set of 8 oz. jam jars with metal rings and lids. Please do not try to reuse the Grey Poupon jar or any other crazy jar you have in your house, you are looking for a headache. Canning jars are made for what we are putting them through and I cannot and will not guarantee any sort of success with crappy jars. When they are empty, reuse your jam jars and the rings again and again. So don’t worry, they pay for themselves in a couple of uses. Note: You can only use the lids once. It’s okay – I don’t want my next batch of blueberry syrup to taste like beets anyways. Lids are relatively cheap.

Besides the jar assemblies, you will also find handy a jar funnel, head space measuring tool & jar tongs. These come in a kit at places like Target & Fleet Farm. Some kits even come with a handy magnet to help you take the lids out of the boiling water later. Other items you will need are a ladle, a couple of tea towels, paper towels, either labels with your product information or a sharpie pen.


There are two methods for sterilizing your jars that I would recommend. One is to boil them in a huge pot of water on the stove top for at least 5 minutes. I add sanitizing powder too. The nice this about this method is that you already have your pot for sterilizing everything else. 

But this does take up a lot of space. So the alternative method is the dishwasher. Place your jars on the top rack and instead of using your normal gel or tablet, use a sterilizing powder like OneStep. I steal out of my husband’s stash – he uses it in the wine making process.


Now, let us proceed . . .

In a food processor, add roughly chopped up red, green and habanero peppers with the seeds removed.
 Add the pureed mixture to a heavy bottomed 6 quart pot. Add cider vinegar and pectin and bring to a boil. Cook for another minute.
 Add sugar to the mixture and stir until dissolved. Set a timer for 6 minutes and boil until the timer runs out. 

Place lids in a small pot and bring to a boil. This softens the wax on the lids.









The jelly is ready. You should have 8 prepped, sanitized 8 oz. jelly jars for this recipe. Run your finger along the top of the jar before you start to make sure the edge of the jar is smooth. If it is rough, you may get leaks and is a sign that your jar is broken. Be sure to check even if they are brand new jars before you use them.
Ladle the jelly into the jars using the funnel. Measure to see that you have ½ inch of head space  The correct amount of head space is important because it allows the jar to seal properly. Wipe the rim of the jar with a clean, damp cloth. I dip mine in the water from sanitizing the jars.


With the magnet, fish out the lids and place them on the jars. Add the metal rings to the jars. Tighten just so they are hand tight. Do not wrench on the jars, we want to prevent leaks, but allow the air to escape the jar when the lid seals.

Now for sealing . . .

You have two options for sealing. One options is to place in a water bath (a large pot of boiling water) for  5-10 minutes. Or you can utilize what I like to call the jam method . . .Once the rings are on, flip lid side down and let sit on the counter like this for 5 minutes.
Note: The jars are still hot.


Turn back right side up and leave them alone. Just walk away!!
You will hear them make a “puck” sound after awhile, meaning they have sealed.

When they have cooled, label and enjoy! If you have any jars that do not “puck” you will have to refrigerate and consume sooner than later.

Quest 76: Maple Carrot Cake Muffins


In all the recipes that we have done, we have not considered Epona or anything even remotely associated with her. Now Epona is a good horse and deserves some recognition for all the times she has hauled me around Hyrule field on some side quest to find a - oooh piece of candy. So in honor of our friend Epona, we are making a carrot recipe - and don't worry it won't be the last. This is one of my favorite recipes and it's pretty easy too. With a little GF baking know-how, there is not much difference if you want to make this GF or regular flour. Enjoy!

Gear!
3 cups shredded carrots
2 cups GF AP Flour - with xanthium gum
1 cup sugar
1 t baking powder
1 t baking soda
1 t cinnamon
1/2 t salt
4 eggs
1 cup vegetable oil
1/2 cup maple syrup

Frosting
8 oz cream cheese
1/4 cup butter
1 t vanilla
1/4 cup maple syrup
Chopped walnuts - optional

In your mixing bowl, add together carrots, sugar, cinnamon, eggs, vegetable oil, and maple syrup. Mix together
Add flour, baking powder, baking soda, and salt. Mix together until smooth. Let sit for at least 10 minutes so the dough is not grainy.
Preheat oven to 350 degrees F. Prep a muffin tin with non stick spray and cupcake liners. Scoop batter into muffin tin.
Bake for 20-25 minutes or until a toothpick comes out clean. Let cool completely before frosting.
Let's make frosting! In a bowl, add cream cheese, butter, vanilla and maple syrup. Beat together until fully combined.
With an offset spatula, frost the muffins anyway you like. You can get fancy and use a cake decorating tip as well, but today I went for quick and easy.

Quest 69: Hyrule Baked French Toast


It has been a few weeks since the last post, and it has been eventful indeed. I just attended the gluten free feast in Minneapolis last week and there were a lot of different things I haven't had before. Both good and bad, GF products certainly run the spectrum of taste. It made me think about things I really used to enjoy before being diagnosed with Celiac and French Toast certainly made that list. The flavors are pretty generic and GF; however the bread is usually an issue. GF bread does not have a great reputation for being awesome. I have found some really horrible bread and some decent. Now, today I am using a brand that I have latched onto because I like it, but I am not being sponsored to use it. I hope you have options in your area and that you have the ability to try different ones to find what you like. Enjoy!

8 Slices of Hearty Artisan GF Bread - such as Schar
4 Eggs
1 c.Half and Half
1 T. Cinnamon
1 T. Maple Syrup
1 t. Salt
1 T. Vanilla
Powdered Sugar
Strawberries

In a throwaway aluminum pan, crack your eggs, add cinnamon, maple syrup, vanilla and sugar. Beat together until it comes together.










Add half and half to the mix and beat together.
 Add the bread to the mixture. I dip the bread and stack it on top of each other, so that it all gets a start on the soaking process. Cover with plastic wrap and place in the fridge overnight.

In the morning, a good deal of the mixture has been soaked up. Preheat the oven to 400 degrees F. Bake in the oven for approx. 20-25 minutes.
The baked toast will be golden and delicious. As an added bonus, the remaining soak becomes custard that is super tasty.
Serve along side some bacon. Top with powdered sugar, Triforce cut strawberries and more maple syrup.This brunch should give you the Power to get through another lazy Sunday.

Quest 57: Banana Smoothies

We found another bunch of bananas - but we have to hurry! The monkeys will be here any second, so we have to come up with a fast recipe so that they don't get our lovely bananas! I know - Smoothies! Quick, delicious, and great way to start the day. We hope you Enjoy!

Banana Walnut Oat Smoothie
1 Frozen Banana
2 T. Walnuts
1/2 cup Milk
3 T. GF Quick Oats
2 T. Maple Syrup
1/4 cup Greek Yogurt

Chocolate Peanut Butter Banana Smoothie
2 Frozen Bananas
1 packet Hot Chocolate Mix
1 T, Peanut Butter Powder
1/2 cup Milk
1/4 cup Greek Yogurt


Strawberry Banana Smoothie
1 Frozen Banana
1 cup Whole Frozen Strawberries
1/4 cup Orange Juice
1/4 cup Milk
1/4 cup Greek Yogurt


Frozen Monkey Smoothie
2 Frozen Bananas
1 packet Hot Chocolate Mix
1 T. Instant Espresso Powder
3/4 cup Milk
1/4 cup Greek Yogurt

Let's start with a quick tip about frozen bananas. Before your bananas turn super dark, cut them into small pieces and put them in a freezer bag. Squeeze fresh lemon or lime juice over them and place them in the freezer. This will keep your bananas from turning an icky brown color when you take them out.

Each of these smoothies start out with a frozen banana or two in the bottom of the blender. They serve not only a fabulous flavor and texture, but will also help to thicken the smoothie.








Add all the other goodies listed for the recipe into the blender and pulse. You may have to adjust the liquid amount depending upon how thick you want your smoothie. If you still want your smoothie thicker, you can add ice cubes to the mixture and pulse until combined.
