Quest 11: Rupees, Rupees Everywhere!

Rupees may not make the world go around, but let me tell you - they sure do help. The only LOZ game that actually doesn't utilize the currency is The Adventures of Link, but let's face it, collecting those leveling up points were hard enough w/o worrying about money. I know I find myself side-questing for money at some point in almost every title. Today, we are going to counterfeit our own rupees out of cake to create Petits Fours. These uber sweet treats will leave you tweaking in the corner. Enjoy!


Gear . . . 
Cake
2 cups gluten free all purpose flour xanthan gum
1 1/2 c. sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
1/2 c. shortening (Crisco - plain not butter flavored)
1 cup milk
1 teaspoon vanilla
4 egg whites

Filling
Raspberry Jam

Icing
2 pound bag of confectioner's sugar (sifted)
1/2 c. water
1/2 c. light corn syrup
1 teaspoon vanilla


Let the quest begin!
Let's begin by preheating the oven to 350 degrees F. Grease and flour the bottom of a  15 1/2 x 10 1/2 x 1 inch jelly roll pan.


Separate your egg yokes from the whites in two separate bowls. Set aside
 You don't need the yokes for this recipe, so you can make an omelet or even some custard, if you are ambitious enough.

In another bowl, mix together (using an electric mixer) flour sugar, baking powder, salt, shortening,  2/3 c. of milk and the vanilla on low speed for about 30 seconds. Scrap the bowl and beat on high for 2 minutes, scraping occasionally. Add the remaining milk and egg whites and beat on high for another 2 minutes. 

Ta-da!

Pour into the prepared jelly roll pan and spread out until even using a spatula.


Nice and even. Bake for 25 minutes. No more, no less.

As you can see, the cake is done, but not very brown.

When the cake is completely cooled, you can start cutting your shapes.  I am using a rectangle shape and then later I will trim the corners to make the rupee shape. If you can find the right shape, let me know.

Trimming. 

Now that everyone is cut out and trimmed, I am going to heat up a  half pint jar of Raspberry Jam on medium low.
This will melt the jam and make it easier to apply to the cakes. 

Make sure the cakes are bottom side up before you start. Then with a brush, paint each on with the melted jam.
It will soak in.



To make the icing, start by putting together a double boiler. Basically a saucepan with about 1-2 inched of water with a metal or glass bowl on top. Add the all the ingredients for the icing (confectioner's sugar, water, corn syrup, vanilla and almond extract).  Heat until luke warm DO NOT OVERHEAT!!!

Remove from heat. This is the part where you would add some food coloring. I use Wilton cake frosting colors, but use whatever works for you. I started with blue and later I will make the remaining frosting green. 



I should note here that I have my cakes set up on a cooling rack that is set on top of of 13 x 9 x 2  pan. This creates drainage so that you can scoop up and reuse the icing.
Pour the icing over the cakes. You can spread it out a little with a spatula.
When you are done with half of the cakes, scoop the icing back in the bowl, dye it green and pour over the rest. 


To add the 3D look to our rupees, I am using a Wilton white frosting squeeze bottle thingy. You can find them in the cake decorating section of the grocery store. 

Let them dry. This could take an hour or so.
