Tingle's Random Cooking Tips: Make Awesome Bullbo Strips (Bacon)

Tingle loves crispy bullbo strips. Yum, yummy. He loves them so much that he came up with an ingenious idea of how to get it just right that he would like to share. Enjoy!

Get your bacon spread out on a broiler pan, so it can drip off as it renders. Add a topping option if you choose. Turn on the oven and put the bacon in the oven as it preheats to 425 degrees F.  Once it comes to temperature, bake for an additional approximately 10-15 minutes (20-25 minutes total) or until nice and crispy.


Suggested Toppings Options

  • 1/4 cup Brown Sugar and 1 T Cinnamon
  • 3 T Black Pepper
  • 1/4 cup Minced Jalapenos and 1/4 cup Brown Sugar
  • 3 T. Pumpkin Spice
  • 3 T Cumin and Juice of 1 Lime

Tingle's Random Kitchen Tip: Make your own GF Breadcrumbs



Gluten free breadcrumbs are expensive and don't add a lot of flavor to your meal. So, let's make use of our leftover bread - it's expensive too. Thanks to our friend Tingle, we will be making our own. This process is super easy and can be flavor adapted in a multitude of ways. Enjoy!

Gear!
1 loaf GF Bread - stale
2 cloves garlic
1 t. salt
1 T olive oil

Quest!
Preheat your oven to 400 degrees F. On a half sheet pan, lay out the bread in a single layer. Mince garlic and salt with olive oil into a paste.

Spread the paste on both sides of the bread. Bake in the over for about 10-12 minutes or until bread is golden and toasty.

Let toast cool.




Add the toast to a food processor. In batches, depending on how much toast you have made and the size of your food processor. pulse into small crumbs.

Bag up, mark and freeze until ready to use.

Tingle's Random Cooking Tips: Compound Butter

Tingles thinks that we should start putting butter on everything. While I generally do like butter, I think he may be going a bit far. Apparently he kept playing music to the local cows and now has more milk that you can shake a stick at. Well, at least butter freezes, so let's get creative - Compound Butter is a great way to incorporate flavor and moisture into a dish. Flavor combinations are endless. Let's do it! Enjoy!

Gear!
2-4 Sticks Unsalted Butter
4 cloves garlic
3-4 T fresh herbs (I used parsley, basil & rosemary)
2 T. salt
1 T. pepper


Quest!
In a food processor, chop garlic cloves and herbs until fine. Add butter, cut into large cubes, salt and pepper/
Pulse until smooth and well incorporated.



With a piece of parchment paper. Empty out food processor in a lump of yummy butter.











Shape into a log; twist the ends shut and place in the fridge for about 2 hours. Enjoy!

Tingle's Random Cooking Tips: Aoli

Tingle is at it again and this time his rummaging through the fridge in search of who knows what. Wait . . eggs? lemons?? mustard??? garlic???? OH! Looks like our friend is going to show us a thing or two about making a form of mayonnaise called aoli. This is fantastic on sandwiches, salads or just dipping vegetables in. Enjoy!



Gear!
2 garlic cloves, finely chopped
1 large egg yolk
2 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Salt and pepper

Quest!
Add all ingredients except the olive oil into a small bowl.






Whisk together to combine. Slowly drizzle in the olive oil and continue to whisk until it becomes thick and the garlic suspends in the mixture. That's it! Store in an airtight container in the fridge and it will last about 3 days - so eat up! Enjoy!

Tingle's Random Cooking Tips: Lemon Curd

Kooloo-Limpah! Tingle is out and putting random stuff into the world. So, we've given him a chance to prove himself useful by handing out random cooking tips.  These tips are completely random when they come out - so stay tuned! Anyways, Lemon Curd is super easy to make and it sad that they charge so much for it in grocery store. Since it is citrus season, Tingle thought it appropriate to give you something to do with it all. This is not limited to lemons, but also try grapefruit, blood oranges, tangerines, key limes, etc. The best part - it can kept frozen for up to a year if we do things right. Keep some on hand for Springtime desserts and Summer trifles.

Gear!
5 Egg Yolks
1 Cup Sugar
1/3 cup of fresh lemon juice and zest 

1 Stick of Butter - Cut into small pieces then chilled

Now, let's make the curd! In a double-boiler bowl, combine egg yolks and sugar whisk until smooth, about 1 minute. Zest and squeeze the lemons. Add juice and zest to egg mixture and whisk smooth. Place on double boiler.


Continuously whisk until thickened over medium heat, approximately 8 minutes, or until mixture coats the back of a spoon and is generally the consistency of pudding.




Remove promptly from heat and stir in butter a piece at a time. It should start getting think and rich.Transfer to a container and chill for at least 2 hours. Extra Tip! If it seems a little runny after chilling, you can put it back in the double boiler - if really runny also add another egg yolk and cook down until thickens up. Chill again for at least 2 hours.

To freeze, divide into small freezer safe containers. Label with date and keep in the freezer until ready to use - should keep for months.
