Quest 91: Zora Eggs

Zoras have not been mentioned in our questing as of yet. Well today, we have prepared for you a lovely batch of Zora eggs. This rich and creamy dish is the prefect end to any meal. Enjoy!

Gear!
1 cup small tapioca pearls - not quick cooking
1 can of coconut milk
2 T. honey
1 tsp. vanilla paste
1 tsp. cinnamon
1 egg, separated

Quest!

Add tapioca pearls to a sauce pan.

Add coconut milk and bring up to a simmer.
Add honey, vanilla and cinnamon.
Cook until tapioca is plumped and start to look like fish eggs. Turn heat off and let cool slightly.
Separate your egg into two different bowls.
Beat egg whites until they come to a stiff peak. You can do this by hand or with a mixer.
Added egg yoke to the mixture and stir.

Until creamy and egg is cooked.Fold in egg whites to lighted up mixture.

Serve warm or cold with a dolup on whipped cream on top.

Quest 90: Eenie and Meenie's Veggie Pasta Salad

Eenie & Meenie are at it again - this time they are sneaking veggies in through the pasta. Along with some other nummies added, this pasta salad is a hit with everyone from kids to adults. Plus it is super easy to make. Enjoy!

Gear
12 oz. Rice/Veggie Pasta
1/2 cup Miracle Whip
2 T Balsamic Vinegar
2 T. Garlic Olive Oil
Salt & Pepper
4 Large Basil Leaves
8 oz. Fresh Mozzarella Pearls
1/4 cup Roasted Red Pepper, Chopped
1/4 cup Kalamata Olives
1/4 cup Pepperoni, Chopped
1/2 cup Small Tomatoes, Quartered

Quest

Cook pasta according to direction in salted water. Rinse in cold water and set aside until ready with the dressing.
In a bowl, combine Miracle Whip, Oil, Balsamic vinegar and salt & pepper.
Prep your tomatoes, olives, and pepperoni.
Combine everything into the bowl with the dressing. Stir well to combine everything.

Quest 89: Traveling to the Clouds Stew

Traveling in the clouds comes up in a number of LOZ games. The most obvious is Skyward Sword, but we a;so journey to a place in the clouds in Twilight Princess and Minish Cap. Today the weather is a little chilly and a trip to the clouds with a bowl of nummy stew is just the thing. Enjoy!


Gear!
Stew
2 lbs. chuck roast, cut into 1.2 inch cubes
2 T. potato starch
salt & pepper
3 cloves garlic, chopped
1 bay leaf
1 t. paprika
2 t. GF Worcestershire sauce
1 onion, chopped
3/4 c. red wine - I used Merlot
2 c. beef broth
1 c. carrots, chopped, 1/2 inch
2 c. potatoes, cubed 1.2 inch
1 c. green beams, quartered
bunch thyme
bunch rosemary
1/4 c dried mushrooms
1 T olive oil
1 T. butter

Dumplings
1 1/2 c AP GF Flour with xianthium gum
3 t. baking powder
1 t. salt
3/4 c milk
1/2 c. shredded cheddar
2 T. chives, chopped

 Prep chuck roast, onions, and garlic.
 Place chuck roast, salt, pepper, and potato starch in a zippy bag and mix to coat.
 In a cast iron enamel pot, melt butter and add olive oil. Add onions and sweat until translucent. Add garlic.
Add meat to pan/ Brown the meat, then add all other ingredients except the green beans.
 Cook mixture together for about an hour. Remove thyme and rosemary bunches as well as the bay leaf.

 Add green beans and simmer while we make the dumplings.











Let's make the dumplings! In a bowl, add flour, baking powder, chives and cheese. Mix together.










Add milk and stir together.
 Spoon into the top of the stew and cook 10 minutes covered, then 10 minutes uncovered.



Spoon into a bowl and Enjoy!

Quest 88: Loaded Cheesy Toto Potatoes


The Oracle of Ages Manga brings us potatoes beyond our friends Eenie and Meenie's garden. With this, I would like to share with you a make ahead side dish that is delicious and of course gluten free. It starts with making a cream of onion sauce and just gets yummier from there. Enjoy!


Gear!
1/4 cup chopped onions
1 clove garlic
4 T Butter
salt & pepper to taste
2 T. potato starch
1/4 cup cream
32 oz. diced potatoes
6 oz. Top the Tator or sour cream
4 slices bacon, crumbled
4 oz. cheddar cheese, shredded divided
1 T parsley
1/2 cup corn Chex cereal, crushed


Quest!

Melt butter in a saucepan. Add onions, garlic and begin to sweat with salt.
Cook onions until they get good color from continually cooking in the butter. Add potato starch to start thickening.
Add cream to onion mixture and bring just to a boil. Adjust seasoning with salt and pepper. Set aside.
In a large mixing bowl, add frozen diced hash browns.
To the bowl, I added the onion mixture, top the tator, bacon bits, and shredded cheddar cheese.
Mix together until well mixed.
Separate into 3 disposable pans, sprayed with non stick spray.











Top the potatoes with the reserved shredded cheddar cheese and also the crushed corn Chex.
At this point, you can bake at 425 degree F for 30-35 minutes or until golden brown. Otherwise cover, and freeze for another day.

Tingle's Random Cooking Tips: Compound Butter

Tingles thinks that we should start putting butter on everything. While I generally do like butter, I think he may be going a bit far. Apparently he kept playing music to the local cows and now has more milk that you can shake a stick at. Well, at least butter freezes, so let's get creative - Compound Butter is a great way to incorporate flavor and moisture into a dish. Flavor combinations are endless. Let's do it! Enjoy!

Gear!
2-4 Sticks Unsalted Butter
4 cloves garlic
3-4 T fresh herbs (I used parsley, basil & rosemary)
2 T. salt
1 T. pepper


Quest!
In a food processor, chop garlic cloves and herbs until fine. Add butter, cut into large cubes, salt and pepper/
Pulse until smooth and well incorporated.



With a piece of parchment paper. Empty out food processor in a lump of yummy butter.











Shape into a log; twist the ends shut and place in the fridge for about 2 hours. Enjoy!

Quest 87: Spikes

As we wander through the dark and dreary dungeons of Hyrule, we often find ourselves being chased by spikes. Well today, we are the ones who will be hunting the spikes with this delicious dish - Spike meatballs. Make sure to peek in the oven before going around the corner with this dish - Enjoy!

Gear!
1 lb. ground beef
1 small onion, chopped finely
2 t. garlic, minced
1 t. salt
1 t. pepper
1 t. parsley, dried
1/2 cup milk
1/4 cup uncooked rice, white
1 T. Italian Seasoning
24 oz. can Tomato Sauce



Quest!
Preheat oven to 400 degree F. In a mixing bowl, combine beef, onions, garlic, salt, pepper, parsley, rice & milk.

Form into meatball shapes and place in the bottom of a 9 x 13 dish that has been sprayed with cooking spray.

Mix together tomato sauce and Italian seasoning. Add a little more garlic too if you like. Pour mixture over meatballs.

Bake in the over for about 20-25 minutes or until meatballs are cooked through and rice spikes out of the sides.
Serve with baked potatoes and corn and Enjoy!
